How our paella catering works in Pondwell

Live paella works almost anywhere with a level, ventilated spot: a garden, marquee, barn, courtyard or field. Popular choices include vegan paella, mixed paella and seafood paella, and we’re regularly asked to cater leaving dos and retirements and family celebrations and christenings.

In a rural place like Pondwell, the setting does plenty of the work: a giant pan in a garden or field fits perfectly. Let us know about access and ground conditions. You’ll know exactly what’s included before you book: the menu, the staff and any extras.

How it works

Once the rice is in, we don’t stir it. That’s what gives paella its separate grains and crispy base. Your guests will smell it before they see it. Around midsummer it stays light in Pondwell until about 9:20pm; by late September sunset is nearer 7:10pm, so summer evening events are generally served in daylight. In December it is dark by about 4:00pm, so winter events need lighting where we cook.

  1. First, you send us your date, venue, numbers and diets.
  2. We put together a menu and a clear quote.
  3. We arrive early, set up the cooking area and start the stock.
  4. Your guests watch the paella cook, with any tapas served first.
  5. We serve from the pan, then clear our cooking area away.

Before we arrive

  • Make sure the spot is clear of anything flammable
  • Have a level space ready for the pans
  • Confirm the venue is happy with live cooking

Why live cooking beats a buffet

Plated meals need a kitchen and a bigger team. Live paella needs a level, ventilated spot and the venue’s permission to cook, and it is entertaining too. The cost per head generally falls as numbers rise, because the cooking set-up is similar for different sizes of event. Give us your numbers and we’ll quote.

About the dishes

Mixed paella

A mix of chicken and seafood, for guests who want a bit of everything.

Paella Valenciana

The original paella from Valencia is a countryside dish of chicken and vegetables, not seafood. It’s a favourite with guests who do not eat fish.

DIY paella versus live catering

Hiring a pan and burner is one option, but there’s shopping, prep and hours of cooking. We take care of all of it.

DIY catering keeps costs down, but the host spends the party cooking. With live paella catering, you get the theatre without the work.

Catering for every guest

With a little notice, every diet is easy. We suggest:

  • Make sure most guests can sit to eat
  • Plan a meat, a seafood and a vegetable or vegan pan
  • Ask about diets and allergies on your invitation or RSVP
  • Tell us what else is being served

After service, we pack down our cooking area.

Bread, salad and lemon wedges make the meal go further.

  • Cooked live in giant pans at your event
  • Vegetarian, vegan, gluten-free and halal options
  • Paella, tapas, canapés and desserts
  • Sangria, bar staff, crockery and waiting staff
