How it works
We cook over gas burners in wide, shallow pans. We need a level, ventilated spot, and we agree where that is before the day. At midsummer, it’s light in Pondwell until about 9:20pm, perfect for canapés outdoors. In late September, sunset is about 7:10pm; winter receptions, dark by 4:00pm, are better indoors.

Planning the cooking area
Live paella is cooked over gas burners in large pans, so we need a suitable spot. Here’s what we look for:
- Space to finish hot dishes
- Table space for sharing dishes at seated meals
- Permission from the venue
Pondwell is a more remote spot, so tell us early and we’ll plan the journey.
Not sure about your space? Send us a picture and we will tell you honestly before booking.

For planners, venues and organisers
If you run the same event each year, tell us your dates early, so we can plan ahead.
Venues often have their own rules about outside caterers: where cooking is allowed, access times and the paperwork they need. Send us your venue’s requirements and we’ll follow them.
DIY paella versus live catering
For a small group, cooking yourself can work well. For big numbers or lots of diets, a caterer makes life easier, and keeps vegetarian and allergy-safe pans separate.
If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and leave the rice alone once it’s in. Keep a clear zone around the burner.
Prices and what affects them
There are no hidden charges: the price is based on:
- Crockery and cutlery, or disposables
- Parking and unloading
- Extra courses such as canapés, tapas and dessert
- How many staff you need
Larger events generally cost less per head, because the cooking set-up is similar for different sizes of event. Give us your numbers and we’ll quote.
Details that help
We can quote more accurately with a few details. Here’s what to include:
- Whether the venue has crockery or staff
- Diets and allergies you know about
- Your date and when you want to eat
- Which courses you have in mind
Not sure what you need yet? No problem: give us the basics about your event, and we’ll make suggestions. Start when you’re ready: use our quote form.
