Live paella or other catering?

Generic canapés all look the same. Spanish tapas bring colour and flavour. The cost per head generally falls as numbers rise, since the set-up is much the same either way. Give us your numbers and we will quote.

FAQs for Colliers Wood

Is parking a problem for events in Colliers Wood?

London parking needs planning: let us know about permits or off-street space. We’ll plan unloading around it.

Can you cook in Figge's Marsh?

Only with permission from the park’s owner, usually the council. Check with them, and we’ll provide our paperwork.

Do you have vegetarian tapas?

Lots. Tortilla, patatas bravas, padrón peppers and Manchego are vegetarian classics.

What do you need at the venue?

Level ground for the burners, pans and a table, in the open air or a ventilated covered area, plus the venue’s agreement to cooking.

Do you cater for coeliacs?

We can, if you tell us in advance. Rice is naturally gluten-free, but stock and some ingredients may not be, so we make a separate gluten-free pan.

Is halal food available?

We can. Let us know your halal numbers, and we’ll cook a separate pan.

How many tapas per person?

We plan quantities around your timings and courses. Give us the details and we will advise.

Do you provide plates and cutlery?

Yes, on request. Crockery, cutlery and napkins, or good-quality disposables can be added to your booking.

Cook it yourself or book a caterer?

Cooking it yourself? Test your pan and burner first, have hot stock ready, and don’t stir once the rice goes in. Keep a clear zone around the burner.

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.

How the day works

Watching it cook is half the fun. Onion, garlic, peppers and tomato go in first, then the stock and saffron, then the rice, which cooks without stirring while your guests chat. A summer drinks reception in Colliers Wood has daylight until about 9:20pm at midsummer, ideal for tapas in the garden. In late September, sunset is about 7:05pm; winter receptions, dark by 3:55pm, are better indoors.

  1. It starts with your date, venue, numbers and how you want the tapas served.
  2. We put together a tapas selection and a quote.
  3. On the day, we set up and prepare the hot tapas there.
  4. Canapés circulate with drinks, or tapas go to the tables.
  5. Afterwards, our equipment is cleared away.

Getting ready for the day

  • Leave space around the cooking area
  • Let us know who to talk to on the day
  • Have a gazebo or cover ready if rain is likely
