About our paella catering in Hailey

Almost any venue with a level, ventilated spot will do: a garden, marquee, barn, courtyard or field in and around Hailey. We’re often asked to cater festivals, fairs and school events and retirement and leaving parties, with seafood paella, black rice and vegan paella.

Somewhere as small as Hailey, a garden or field is frequently the venue. Tell us about narrow lanes or long drives and we will plan for them, and cooking close to where we can park helps. We plan the timings around your day, so the paella is ready when you want to eat.

What’s in the pans

Seafood paella

Seafood paella starts with a good fish and shellfish stock. Shellfish goes in towards the end so it stays tender.

Paella Valenciana

Valencians take their paella seriously. The classic version is chicken, green beans and butter beans with saffron.

Working with your venue

If you are organising for someone else, such as a wedding planner, an office manager or a festival organiser, we are happy to deal with you and the venue directly. It keeps things simple.

Hosting a party at home? Send us a photo of the garden and tell us about access, and we’ll tell you honestly whether live paella will work.

Dietary needs and planning tips

Paella is one of the easiest dishes for mixed diets, because each paella is cooked in its own pan. A few tips:

  • Plan a meat, a seafood and a vegetable or vegan pan
  • Collect dietary needs with your RSVPs
  • Ensure most guests can sit to eat
  • Flag any coeliac guests, not just gluten-free preferences

The rice takes about 20 minutes once it goes in, so we start it at the right moment for your event. If plans change, tell us and we will adjust.

Tapas or canapés make a good start while the paella cooks.

Should I cook it myself?

Hiring a pan and burner is one option, but there’s shopping, prep and hours of cooking. A caterer handles all of that.

DIY catering keeps costs down, but the host spends the party cooking. With live paella catering, you get the theatre without the work.

Paella compared with other options

A cold buffet is simple but has no theatre, and the food sits out. Paella is cooked in front of your guests and served hot. Access and travel can make a difference to the cost, so tell us about the venue when you ask for a quote. The full price is confirmed before you book.

Our caterer checklist

Hailey: your questions answered

Can you cater a reception after a service at Church of St John the Evangelist?

Yes, at a nearby garden, marquee or hall where we can cook. Live cooking generally happens at the reception venue, not the church. Tell us where the reception will be.

Is Hailey close to London?

About 64 miles from central London.

Can we add tapas or canapés?

Yes, and it is a popular combination. Tapas go out first, then the paella.

What do you need at the venue?

Less than you might think: a flat spot away from anything flammable, with space to serve. If in doubt, send a picture.

Is live paella good for a large crowd?

It is ideal. Big pans feed plenty of people, and service from the pan is quick.

Do you have a kids’ option?

Yes, children are easy to cater for. Tell us how many and roughly how old, and we’ll plan a pan with them in mind.

Can you cook in the rain?

We need a covered spot, such as a gazebo, marquee or open-sided barn with good ventilation. We’ll agree a wet-weather plan with you.

Is the paella gluten-free?

We can cook a gluten-free paella in its own pan. Let us know about coeliac guests in advance so we can plan it carefully.

The process

Watching it cook is half the fun. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook. Planning an evening event in Hailey? Sunset is around 9:00pm in late May, 9:30pm at midsummer and 7:10pm in late September; once it is dark, we need light to cook and serve by.

  1. Contact us with the basics: when, where and how many.
  2. We come back with paellas to suit your guests, plus any extras.
  3. Closer to the day, we confirm timings and the cooking spot.
  4. We set up, cook from scratch and keep an eye on your timings.
  5. We serve, then leave our area tidy.

Getting ready for the day

  • Give us your final numbers and diets
  • Let us know the timings for the day
  • Arrange parking near the cooking spot
