Wedding paella catering in Hailey

Wedding paella catering in Hailey, cooked live

A paella wedding makes mixed diets simple: every paella is cooked separately, so every guest gets a proper hot main. We are often asked to cater big weddings with every diet and vow renewals and civil ceremonies, with evening paella, a paella wedding breakfast and table tapas.

There’s something special about a country wedding near Hailey, and paella cooking in the open air adds to it. Plan access and cover in case of rain. We serve straight from the pan, so it’s hot and generous, and a queue moves quickly.

DIY paella versus live catering

A DIY paella party works for small groups. For big numbers or lots of diets, a caterer makes life easier, and keeps vegetarian and allergy-safe pans separate.

Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather enjoy the party, let us cook.

What we need at the venue

We cook in large pans over gas burners, so we need a suitable spot. Here’s what we look for:

  • Level ground for the pans and burners
  • A separate open-sided gazebo if the meal is in a marquee
  • Open air or a well-ventilated covered spot

If in doubt, send us a picture of the spot and we’ll advise before booking.

What we offer

  • Sangria & bar staff
  • Paella wedding breakfast
  • Dessert
  • Canapé tapas
  • Evening paella
  • Table tapas

Dietary needs and planning tips

Nearly every event has some special diets. To plan for them:

  • Confirm the venue’s catering rules early
  • Ask about your date as soon as you have one
  • Put us in touch with your venue
  • Tell us when speeches will be

The pans are often set up where guests can see them, which makes a lovely backdrop for photos.

Spanish desserts, or your own wedding cake, finish the meal.

Hailey questions

Is Hailey close to London?

About 64 miles from central London.

We’re having a ceremony at Church of St John the Evangelist: can you cater afterwards?

Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Churches rarely have space for live cooking, so the meal is usually elsewhere. Send us the reception address.

Do you do vegan paella?

Yes, and they’re popular with everyone. They have their own pans, stock and spoons.

Is halal food available?

Yes. Halal paella is cooked with halal chicken and no pork or alcohol, in a separate pan.

Can you supply plates?

Yes, if you need them. Tell us what your venue provides and we’ll include the rest in the quote.

Should we have more than one paella?

Two or three covers most guests. We’ll recommend a mix based on diets.

Do you do desserts?

We can add a dessert. Tell us what you have in mind when you ask for a quote.

Can the paella be cooked in a hall?

Only in a suitable, well-ventilated area with the venue’s permission. Most events have us cooking outside or in a doorway or courtyard.

Dishes our guests love

Evening paella

A second round of paella for the evening, served quickly so the party keeps going.

Paella wedding breakfast

Two or three paellas, served from the pans or brought to the tables, with bread and salad.

Working with your venue

Planners and coordinators can contact us directly, and we’ll keep everyone informed on the day.

Hosting a party at home? Send us a photo of the garden and tell us about access, and we’ll let you know if live paella is a good fit.

What happens on the day

Once the rice is in, we don’t stir it. That is how the grains cook evenly and the toasted base, the socarrat, forms. Your guests will smell it before they see it. In Hailey, midsummer sunset is about 9:30pm, and by late September it’s nearer 7:10pm, which means evening paella is usually served in daylight in June and July. Later in the year, plan lighting: in December it’s dark by about 3:55pm.

  1. Tell us your date, venue and numbers.
  2. Together we plan each course.
  3. We agree timings with you and your venue.
  4. We cook live on the day and serve each course.
  5. We pack down, and staff stay as agreed.

Before we arrive

  • Leave space around the cooking area
  • Let us know the timings for the day
  • Check the venue allows live cooking
