Wedding paella catering in Waterhall, cooked live

A wedding paella is food and entertainment at once. Guests drift over to watch the pans while the photos are being taken, and the food arrives hot and plentiful. Popular choices include Spanish desserts, evening paella and a paella wedding breakfast, and we are frequently booked for food for evening guests and informal wedding breakfasts.

Rural weddings around Waterhall have a magic of their own, and an open-air paella adds to it. Plan for access and a wet-weather cover. We plan the timings around your day, whether that’s speeches, a lunch break or a festival schedule.

Dishes our guests love

Paella wedding breakfast

Two or three paellas, served from the pans or brought to the tables, with bread and salad.

Table tapas

Tapas set out on every table to share, such as patatas bravas, croquetas and Manchego.

Planning the cooking area

No two venues are the same, so we ask about the space when you contact us. In general, we need:

  • Good ventilation: outdoors, or an open-sided cover
  • Confirmation that open cooking is allowed
  • Flat, firm ground for the cooking area

If in doubt, send us a picture of the spot and we will advise.

Diets, allergies and planning

Dietary needs are easy to plan for with a little notice. We suggest:

  • Count day and evening guests separately
  • Enquire early for peak dates
  • Share your running order, including speeches
  • Include any suppliers you are feeding

If speeches or photos run over, tell us, and we’ll adjust the cooking so the paella is served at its best.

We can provide crockery and waiting staff if your venue doesn’t.

What happens on the day

On the day, we set up the burners and pans and start cooking the sofrito and stock. The rice goes in about 20 minutes before serving, so the timing is planned around your event. In Waterhall, midsummer sunset is about 9:20pm, and by late September it’s nearer 7:05pm, so an evening paella for evening guests is generally served in daylight in high summer. For autumn and winter weddings, when it’s dark by about 3:55pm in December, plan lighting for the cooking area.

  1. First, we check your date.
  2. You choose canapés, tapas, paellas and desserts.
  3. We confirm the plan with your coordinator.
  4. The pans cook while guests enjoy the drinks.
  5. We serve, then pack down.

Before we arrive

  • Make sure the spot is clear of anything flammable
  • Have a level space ready for the pans
  • Give us a contact for the day

Questions from Waterhall

Can you cook at venues in the South Downs National Park?

Yes. Some venues there have rules about vehicles, ground and cooking, so check with yours. We’ll work to whatever the site needs.

Is Waterhall too small for live paella?

No, we cook in small places too. Let us know about access and parking.

Is the paella gluten-free?

Yes, on request. Rice is naturally gluten-free, but stock and some ingredients may not be, so we cook a gluten-free paella separately.

Should we have more than one paella?

Most events have two or three: a meat or mixed paella, a seafood paella and a vegetable or vegan one. We will suggest a split based on your guests.

How much is live paella catering?

Every event is quoted individually, based on what you actually want. Tell us your date and numbers for a clear quote.

Can paella feel formal?

It can be as relaxed or as polished as you like, depending on how it’s served.

What if the timings change?

Tell us and we’ll adjust. We keep in touch with your venue on the day so the paella is served fresh.

Can you cater for children?

Yes. A simple chicken paella is normally popular with children. Include children in your numbers.

Events we cater in Waterhall

A sharing-style meal gets guests talking across the tables.

We can help if you are planning any of the following:

  • Relaxed sharing-style wedding breakfasts
  • Destination-style celebrations at home
  • Barn and farm weddings
  • Weddings with mixed diets

Planning photos in Withdean Park? It is worth checking the park’s rules first.

Comparing caterers

  • How late numbers can change
  • How each diet is kept separate
  • Space, access and power needs
  • Whether VAT is included

12 questions to ask before you book

Is live paella right for your wedding?

A hog roast is popular at weddings, but harder for vegetarian, vegan and halal guests. Paella covers them with separate pans. Comparing caterers? Look at what each quote includes: staff, crockery, sides, travel and VAT. We itemise ours.

What you get with us

  • Every diet catered for, pan by pan
  • Events in Waterhall and across Brighton and Hove
  • Sangria and bar staff available
  • Real theatre, not just catering

Can I cook paella for a crowd myself?

A DIY paella party works for small groups. For big numbers or lots of diets, a caterer makes life easier, and keeps vegetarian and allergy-safe pans separate.

Cooking it yourself? Test your pan and burner first, have hot stock ready, and leave the rice alone once it’s in. Keep a clear zone around the burner.

What wedding paella catering costs

Two events with the same number of guests can cost different amounts, because of:

  • Parking and unloading
  • How many courses
  • Crockery and cutlery, or disposables
  • Chicken, vegetable or premium seafood

Compared with a plated meal, live paella is often good value, as there’s no kitchen to hire and fewer staff to pay. Ask us for a quote.

Details that help

You don’t need every detail fixed to get a quote, but it helps to know:

  • Whether you want canapés, tapas or desserts
  • The address or venue name
  • Diets and allergies you know about
  • Your date and when you want to eat

To get a price, fill in our quote form. Give us the details of your wedding, and we’ll suggest paellas and extras to suit.

  • Vegetarian, vegan, gluten-free and halal options
