Live paella across BN1

Paella catering across BN1

Everything is cooked from scratch on site, beginning with a sofrito of onion, garlic, peppers and tomato, followed by stock, saffron and rice. We cook chicken and chorizo paella, paella Valenciana and vegetable paella, and typical bookings are for retirement and leaving parties and festivals, fairs and school events.

The paella is cooked in giant, shallow pans over gas burners. We need a level, ventilated spot, and we agree where that is before the day.

  1. First, you send us your date, venue, numbers and diets.
  2. You get a suggested menu and an itemised quote.
  3. On the day we arrive in good time, set up and start the stock.
  4. Your guests watch the paella cook, with any tapas served first.
  5. It’s served straight from the pan, and we pack down afterwards.

Cost

There’s no one-size-fits-all price for live paella. A garden party lunch and a full wedding menu are very different jobs. We itemise everything in your quote.

Planning live paella in BN1

BN1 covers everything from Brighton, Hove and Carlton Hill to 3 small villages and hamlets, and live paella works in all of them. Town events mean planning parking; village events mean planning access. Around 19 places in BN1 are close to the coast, where we always plan shelter from the wind, and seafood paella is popular.

Brighton: Historic houses near Brighton include Royal Pavilion (0.8 miles south-west) and Preston Manor & Gardens (1.1 miles north-west). Historic venues frequently limit cooking, so ask early if you are booking one. For guests coming by train, Brighton has its own station, London Road (Brighton) station. In Brighton, the sun sets at about 9:15pm in late June and about 7:05pm in late September, so summer evening service is normally in daylight. For winter events, when it’s dark by about 3:55pm, we need lighting at the cooking spot.

Before you choose a spot

We’ll be honest if a space won’t work. The main points are:

  • The venue’s permission for live cooking
  • Clearance from fences, hedges, branches and anything flammable
  • Outdoor space or a ventilated gazebo

Who books paella catering?

It suits relaxed, sociable events, with guests mingling as it cooks and then sit down to share.

We can help if you’re planning any of the following:

  • Anniversary celebrations
  • Company summer parties
  • Leaving dos and retirements
  • Fairs, fêtes and festivals

About the dishes

Mixed paella

Mixed paella brings meat and seafood together, and it is often the first pan to empty.

Black rice

Black rice gets its colour from squid ink, and is typically served with alioli. It is a striking addition to a seafood menu.

How we price paella catering

Live paella pricing is straightforward once we know the basics:

  • Extra courses such as canapés, tapas and dessert
  • Parking and unloading
  • How many staff you need
  • Plates, cutlery and glassware

Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you only pay for what you want.

Getting an accurate quote

To check availability and price, we need:

  • The date and time of the event
  • Anything your venue supplies
  • A picture of the space, if you can
  • Approximate guest numbers, including children

Each quote is tailored to your event. Give us your date and numbers, and we’ll confirm whether we’re available that day.

Can I cook paella for a crowd myself?

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

FAQs for BN1

Is paella enough as a main?

Yes. Paella with bread and salad makes a full main course.

How long does the paella take?

We arrive well before serving to set up and start the stock. The rice itself takes about 20 minutes, and we time it to your schedule.

Do you cater for young children?

Yes, children are easy to cater for. Tell us how many and roughly how old, and we will plan for them.

Do you cook inside?

Usually we cook outdoors or under a ventilated cover, since the burners are gas. We’ll check whether your venue has a suitable space.

What equipment do you bring?

All cooking kit comes with us. Let us know what your venue has, like tables or crockery.

What if the weather’s bad?

We need a covered spot, such as a gazebo, marquee or open-sided barn with good ventilation. We will agree a wet-weather plan with you.

Do you cater for vegetarian guests?

Yes, and meat eaters frequently go back for seconds. They have their own pans, stock and spoons.

  • Cooked live in giant pans at your event
  • Vegetarian, vegan, gluten-free and halal options
  • Paella, tapas, canapés and desserts
  • Sangria, bar staff, crockery and waiting staff
