How the day works

We cook over gas burners in wide, shallow pans. We need a level, ventilated spot, which we agree with you beforehand. A summer party in Brighton stays light until about 9:15pm at midsummer, which gives a garden party a long evening. In late September it’s dark by about 7:05pm; add lights for the evening.

  1. Send us your date, address and numbers.
  2. We suggest paellas and extras and send a quote.
  3. We set up before guests arrive.

Can I cook paella for a crowd myself?

A DIY paella party works for small groups. For big numbers or lots of diets, a caterer makes life easier, and handles separate pans for each diet.

Cooking it yourself? Test your pan and burner first, have hot stock ready, and do not stir once the rice goes in. And keep children and pets well away from the burner.

Is live paella right for your party?

Compared with a barbecue, paella is served all at once, so everyone eats together. And nobody is stuck at the grill. When you compare quotes, check what each one includes: staff, crockery, sides, travel and VAT. We itemise ours.

What you get with us

  • We cover Brighton and the whole of Brighton and Hove
  • Separate pans for vegetarian, vegan, gluten-free and halal guests
  • A quote that spells everything out
  • Real theatre, not just catering

Your questions about paella party catering in Brighton

We’re having a ceremony at St Martin's Church: can you cater afterwards?

Yes, at a nearby garden, marquee or hall where we can cook. Churches rarely have space for live cooking, so the meal is normally elsewhere. Send us the reception address.

Could we have live paella in William Clarke Park?

Only if the landowner, normally the council, allows it. Check with them, and we’ll provide our paperwork.

Is the paella cooked on site?

Yes, always. We cook from scratch in large pans at your venue, where your guests can watch.

Do you provide plates and cutlery?

We can. Let us know what you have, and we’ll quote for the rest.

When do you arrive?

It depends on the menu and numbers. We’ll agree arrival, cooking and serving times with you so the paella is ready when you want it.

Do you cater for coeliacs?

A gluten-free pan is no problem. Tell us about any coeliac guests when you book so we take the right care.

How much space do you need?

A level space for the pans, burners and a serving table, outdoors or in a marquee or well-ventilated area, plus the venue’s agreement to cooking.

What areas do you cover?

London and South East England: Kent, Surrey, East and West Sussex, Hampshire, Berkshire, Bucks, Oxfordshire and the Isle of Wight.

Catering for every guest

With a little notice, every diet is easy. We suggest:

  • Collect dietary needs with your invites
  • Make sure children stay back from the pans
  • Give separate numbers for children
  • Plan a covered spot for wet weather

We arrive before your guests to set up, so the cooking is under way as people arrive.

A jug of sangria sets the tone.

What we need at the venue

We will be honest if a space will not work. What matters most:

  • Flat, firm ground for the cooking area
  • A safe distance from anything that could catch
  • Access for unloading near the cooking spot

If in doubt, send us a picture of the spot and we will advise.

Organising for someone else?

If you’re organising for someone else, whether you are a planner, an office manager or an event organiser, we’re happy to deal with you and the venue directly. It saves passing messages back and forth.

Many venues have rules for outside caterers: where cooking is allowed, access times and the paperwork they need. Send us your venue’s requirements and we will follow them.
