Wedding paella catering in Brighton and Hove, cooked live

Sangria, bar staff, crockery and waiting staff can be added, so the catering fits the way you want your day to feel. On the menu are Spanish desserts, evening paella and a paella wedding breakfast, and we’re regularly asked to cater weddings with mixed diets and vow renewals and civil ceremonies.

A wedding in Brighton and Hove might mean a ceremony at a local church followed by a reception in a garden, marquee or hall. That is ideal for live paella: it can be cooking during the photos. We bring everything we need to cook, and pack down our cooking area when service is finished.

Choosing a paella caterer

Organising for someone else?

Many venues have rules for outside caterers: where cooking is allowed, access times and the paperwork they need. Tell us what your venue needs and we’ll work to it.

Events in public spaces, like parks, usually need permission. We will provide any information the landowner or council asks for.

Live paella or other catering?

Buffets can mean food sitting for a while. Paella goes straight from pan to plate when guests are ready. Premium seafood costs more than chicken or vegetables, so your choice of paellas affects the total. Tell us your budget and we’ll suggest a menu.

Why us?

  • Everything cooked fresh at your event
  • Waiting staff and crockery on request
  • Add tapas, canapés and Spanish desserts
  • Sangria and bar staff available

Read Our pricing And Our guide to catering costs.

Planning the cooking area

Before the day, we will agree where we cook. A good spot ticks these boxes:

  • Open air or a well-ventilated covered spot
  • An open-sided catering gazebo next to the marquee
  • The venue’s permission for live cooking

If in doubt, send us a picture of the spot and we’ll advise.

What happens on the day

When the rice goes in, it is left alone. That is what gives paella its separate grains and crispy base. Your guests will smell it before they see it. For a summer wedding in Brighton and Hove, the sun sets at about 9:20pm in late June and about 7:05pm in late September, which means evening paella is generally served in daylight in June and July. Later in the year, plan lighting: in December it is dark by about 3:55pm.

  1. You tell us your date, venue, guest numbers and how you picture the day.
  2. We build the menu course by course and send a quote.
  3. We agree timings with you and your venue, including speeches and photos.
  4. We cook live on the day and serve every course on cue.
  5. Afterwards we clear our area; any staff you’ve booked stay as planned.

How to prepare

  • Share the running order, including any speeches
  • Have a gazebo or cover ready if rain is likely
  • Get the venue’s permission for cooking

Catering for every guest

Most events have a mix of diets. To plan for them:

  • Pick a serving style
  • Share your running order, including speeches
  • Tell us about suppliers who need feeding
  • Give us separate day and evening numbers

We generally set up where guests can watch, and it makes a great photo.

Add sangria, or bar staff to serve your own drinks.

FAQs for Brighton and Hove

Can you cook near the sea around Brighton and Hove?

Yes, as long as we can shelter from the wind. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

Can you cook at venues in the South Downs National Park?

Yes, though some venues in protected landscapes have extra rules; ask your venue. We’ll follow the site rules.

What if the weather’s bad?

A covered, ventilated spot keeps us cooking in the rain. We will talk it through before the day.

How long do you need on site?

That depends on your menu and numbers. We agree the timings in advance.

Is it really cooked live?

Yes. We arrive with everything we need and cook it there and then, serving it hot from the pan.

Do you have a kids’ option?

Yes. A simple chicken paella is generally popular with children. Include children in your numbers.

Can we try the food first?

Tell us you’d like a tasting when you enquire, and we will explain how it works.

Can you feed our photographer and band?

Yes, include them in your numbers. Tell us when they’ll eat.

Can I cook paella for a crowd myself?

Cooking paella for a crowd yourself is possible, but it is harder than it looks. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.

Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather be with your guests, we will do the cooking.
