Space, weather and the venue

Every venue is different, so we ask about the space when you get in touch. In general, we need:

  • Flat, firm ground for the cooking area
  • Outdoor space or a ventilated gazebo
  • A separate open-sided gazebo if the meal is in a marquee

As a London location, Avery Hill is inside the Ultra Low Emission Zone, and parking takes planning: tell us about parking bays, permits or a driveway.

Not sure about your space? Send us a picture and we will tell you honestly before booking.

Should I cook it myself?

You can hire equipment and do it yourself, but you will still need to source ingredients, prep and cook for hours. We take care of all of it.

Avery Hill: your questions answered

Can you cook in Shoulder of Mutton Green?

Only if the landowner, usually the council, allows it. Ask them first, and we’ll send any information they need.

What about parking in Avery Hill?

It can be, so tell us about parking bays, permits or a driveway. We will plan unloading around it.

How soon do we need to book?

As early as you can, especially for summer weekends. Even if it’s short notice, it is worth asking.

What if the weather’s bad?

We need a covered spot, like a gazebo or open-sided marquee. We’ll agree a wet-weather plan with you.

How long do you need on site?

We arrive well before serving to set up and start the stock. The rice itself takes about 20 minutes, timed around your event.

Is the paella cooked on site?

Yes. We cook from scratch in large pans at your venue, where your guests can watch.

Do you work with our venue?

Yes, and it saves you passing messages. Introduce us and we will sort the details.

Do you cater for coeliacs?

A gluten-free pan is no problem. Let us know about coeliac guests in advance so we take the right care.

Step by step

Service is quick: the paella goes straight from the pan to the plate, so large groups are fed quickly. When service is finished, we pack down. For a summer wedding in Avery Hill, the sun sets at about 9:20pm in late June and about 7:05pm in late September, which means evening paella is generally served in daylight in June and July. For autumn and winter weddings, when it is dark by about 3:55pm in December, plan lighting for the cooking area.

  1. We check availability for your date.
  2. You choose canapés, tapas, paellas and desserts.
  3. We confirm everything with your venue.
  4. The pans cook while guests enjoy the drinks.
  5. We serve and clear our cooking area.

Preparing for the day

  • Ensure the spot is clear of anything flammable
  • Let us know the timings for the day
  • Choose a level spot for the cooking area

Live paella or other catering?

Food trucks serve one order at a time, which can mean long queues at a wedding. Paella pans serve many guests quickly. Compared with a plated meal, live paella is often good value, as there’s no kitchen to hire and fewer staff to pay. Ask us for a quote.
