Questions from Three Oaks
We are having a ceremony at St Laurence's Church: can you cater afterwards?
Yes, at a nearby garden, marquee or hall where we can cook. Churches rarely have space for live cooking, so the meal is typically elsewhere. Send us the reception address.
What about events near the coast?
Yes, as long as we can shelter from the wind. Sea breezes cool the pan, so a windbreak, building or gazebo helps.
What if the weather’s bad?
A covered, ventilated spot keeps us cooking in the rain. We’ll make a plan B with you.
Do you do desserts?
We can add a dessert. Let us know if you’d like one in your enquiry.
Can you cook indoors?
Indoors only where ventilation and the venue allow it. Courtyards, doorways and terraces frequently work.
Do you take everything away?
Our cooking area is packed away and left clean. Table clearing is available with waiting staff.
Do we need staff for canapés?
Staff make canapés work, which we can supply.
How many tapas per person?
It depends on whether they’re a starter, canapés or the whole meal. We’ll suggest quantities for your event.
How it works
The cooking is part of the entertainment. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook. At midsummer, it’s light in Three Oaks until about 9:15pm, perfect for canapés outdoors. In late September, sunset is about 7:00pm; winter receptions, dark by 3:55pm, are better indoors.
