How it works
When the rice goes in, it is left alone. That’s how the grains cook evenly and the toasted base, the socarrat, forms. The smell generally draws people over. A summer drinks reception in The City has daylight until about 9:25pm at midsummer, ideal for tapas in the garden. By late September it’s dark around 7:05pm, and in December by about 3:55pm.

Common questions in The City
How far is The City from London?
Roughly 35 miles from the centre of London.
We’re having a ceremony at Church of St Paul: can you cater afterwards?
Yes, at a nearby garden, marquee or hall where we can cook. Live cooking normally happens at the reception venue, not the church. Tell us where the reception will be.
Are there vegetarian tapas?
Lots. Tortilla, patatas bravas, padrón peppers and Manchego are vegetarian classics.
Do you clear up afterwards?
We clear our cooking area away when service is finished. Waiting staff can clear tables if you book them.
Do you cover The City?
Yes. We cater across London and the South East, and The City is within our area. To check your date, send us your details through our quote form.
What do you need at the venue?
Less than you might think: a level spot clear of fences, hedges and branches, with room for a serving table. If in doubt, send a photo.
Can you do gluten-free paella?
Yes, on request. Rice is naturally gluten-free, but stock and some ingredients may not be, so we make a separate gluten-free pan.
Do you do desserts?
Yes, Spanish desserts can be added. Let us know if you’d like one when you ask for a quote.
Space, weather and the venue
Before the day, we will agree where we cook. It needs to meet a few simple requirements:
- A spot for our serving station
- Space on each table
- An area to prepare hot tapas
Not sure about your space? Send us a photo and we’ll tell you honestly.
Popular choices

- Chorizo in red wine
- Tortilla española
- Albóndigas

- Croquetas

Why choose live paella in The City?
A plated starter needs a kitchen and staff. Table tapas are relaxed and sociable. Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you can choose exactly what you need.
Why us?
- Served hot, straight from the pan
- Add tapas, canapés and Spanish desserts
- Options for vegetarian, vegan, gluten-free and halal guests, each in its own pan
- Food that becomes part of the entertainment

What affects the price in The City
We’ll give you a clear, itemised quote. What affects it most:
- Guest numbers
- Plates, cutlery and glassware
- How many staff you need
- Your choice of paellas
Live paella pricing depends on the event. A garden party lunch and a full wedding menu are very different jobs. Your quote spells it all out.
What we need to know
We can quote more accurately with a few details. Here’s what to include:
- Expected numbers
- A photo of the space, if you can
- Which courses you have in mind
- The address or venue name
Send us the date, your venue or HP14 postcode and guest numbers, plus any dietary needs, and we’ll reply with a menu suggestion and a quote. To get started, send us your details through our quote form.
Should I cook it myself?
Hiring a pan and burner is one option, but there is shopping, prep and hours of cooking. We take care of all of it.
If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and do not stir once the rice goes in. And keep children and pets well away from the burner.
Dietary needs and planning tips
Most events have a mix of diets. To plan for them:
- Match tapas with Spanish drinks
- Decide whether tapas are a starter, canapés or the whole meal
- Label seafood clearly
- Plan more dishes if tapas are the meal
Hot dishes are finished on site.
Spanish desserts to finish.
