Paella catering in Hell Corner, made fresh on the day

Everything is cooked from scratch on site, starting with a slow sofrito of onion, garlic, peppers and tomato, followed by stock, saffron and rice. Typical bookings include family celebrations and christenings and leaving dos and retirements, with chicken and chorizo paella, vegetable paella and seafood paella.

For a rural spot like Hell Corner, the countryside is part of the appeal: a huge pan in a garden or field fits perfectly. Tell us about access and the ground. Everything is cooked from scratch at your event, not reheated, and served the moment it is ready.

How the day works

When the rice goes in, it is left alone. That is how the grains cook evenly and the toasted base, the socarrat, forms. The smell usually draws people over. In Hell Corner, the sun sets at about 9:25pm in late June and about 7:10pm in late September, so summer evening service is normally in daylight. In December it’s dark by about 4:00pm, so winter events need lighting where we cook.

  1. Start with the date, the place and the numbers.
  2. We come back with paellas to suit your guests, plus any extras.
  3. Closer to the day, we confirm timings and the cooking spot.
  4. We set up, cook from scratch and keep an eye on your timings.
  5. We serve, then leave our area tidy.

Before we arrive

  • Check the venue allows live cooking
  • Have a gazebo or cover ready if rain is likely
  • Share the running order, including any speeches

Diets, allergies and planning

Most events have a mix of diets. To plan for them:

  • Have seats for most of your guests
  • Ask about diets and allergies on your invitation or RSVP
  • Plan a meat, a seafood and a vegetable or vegan pan
  • Let us know about other food at the event

If you’ve booked staff, they’ll serve, clear and help keep things moving, so you can relax.

Mixed paella

A mix of chicken and seafood, and a popular all-rounder.

Paella Valenciana

Paella Valenciana is the original: chicken, beans and saffron, not seafood. It is frequently the most popular pan at an event.

Where we can cook in Hell Corner

Live paella is cooked over gas burners in large pans, so the cooking area needs a little planning. Here’s what we look for:

  • Agreement from the venue or landowner to cook on site
  • Space well away from trees, fences and gazebo walls
  • Parking close enough to carry equipment

If in doubt, send us a picture of the spot and we will advise.

Should I cook it myself?

You can hire equipment and do it yourself, but you will still need to source ingredients, prep and cook for hours. A caterer handles all of that.

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

Who books paella catering in Hell Corner?

Few dishes cope with mixed diets like paella, thanks to separate pans for each version. Everyone gets the same kind of meal.

Choosing a paella caterer

Why choose live paella in Hell Corner?

A cold buffet is simple but has no theatre, and the food sits out. Paella is cooked in front of your guests and served hot. Seafood and premium ingredients cost more than chicken or vegetable paellas, so your choice of paellas affects the total. Tell us your budget and we’ll suggest a menu.

Why Hell Corner hosts choose us

  • Events in Hell Corner and across West Berkshire
  • Plates, cutlery and waiting staff available
  • A quote that spells everything out
  • Drinks service on request
