How it works

The paella is cooked in giant, shallow pans over gas burners. It needs a level spot with some shelter and good ventilation, and we agree where that is before the day. In Cripp's Corner, the sun sets at about 9:15pm in late June and about 7:00pm in late September, so summer evening service is normally in daylight. In December it’s dark by about 3:55pm, so winter events need lighting where we cook.

  1. You tell us the date, venue, guest numbers and any dietary needs.
  2. You get a suggested menu and an itemised quote.
  3. On the day, we set up the burners and pans and get the stock going.
  4. The rice cooks in full view, while tapas or canapés go round.
  5. We serve it hot from the pan and clear our area when service ends.

Before we arrive

  • Plan cover in case of rain
  • Check the venue allows live cooking
  • Have a level space ready for the pans

What’s in the pans

Vegetable and vegan paella

Seasonal vegetables on a rich sofrito base make a paella that stands on its own. For vegans, the stock is plant-based.

Black rice

Arroz negro is coloured and flavoured with squid ink, and is generally served with alioli. It makes a dramatic second seafood pan.

Planning for every diet

We cater for vegetarian, vegan, gluten-free and halal guests. To get it right:

  • Tell us what else is being served
  • Plan a meat, a seafood and a vegetable or vegan pan
  • Give us separate numbers for children
  • Collect dietary needs with your RSVPs

A short rest after cooking helps, which is when we generally call guests over.

We can add sangria and bar staff for your own drinks.

Paella compared with other options

When you compare quotes, check what each one includes: staff, crockery, bread and salads, travel and VAT. We itemise ours.
