Questions from Staplecross

How far is Staplecross from London?

Roughly 45 miles from the centre of London, and we cover it as standard.

Is Staplecross too small for live paella?

No, we cook in small places too. Let us know about access and parking.

Do you cook it at the event?

It is. We arrive with everything we need and cook it there and then, serving it hot from the pan.

Can you do sangria?

We can make sangria, and we can staff a bar with your drinks.

Will there be enough food?

Pans are sized to your numbers and other courses. Tell us what else is being served. Our guide to portions explains more.

Do you cover Staplecross?

Yes. We cater across London and the South East, including Staplecross and the rest of East Sussex. To check your date, fill in our quote form.

How many different paellas?

Most events have two or three: a meat or mixed paella, a seafood paella and a vegetable or vegan one. We will suggest a split based on your guests.

When do you arrive?

That depends on your menu and numbers. We agree the timings in advance so the paella is ready when you want it.

Where we can cook in Staplecross

Most gardens and venues can host live paella, but a few things matter:

  • Level ground for the pans and burners
  • Good ventilation: outdoors, or an open-sided cover
  • Clearance from fences, hedges, branches and anything flammable

Not sure about your space? Send us a picture and we’ll tell you honestly.

Dishes our guests love

Seafood paella

Seafood paella starts with a good fish and shellfish stock. The shellfish is added late so it stays tender.

Black rice

Black rice looks dramatic and tastes of the sea, and is popular with adventurous guests.

Can I cook paella for a crowd myself?

Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.

Cooking paella for a crowd yourself is possible, but it is harder than it looks. A big pan needs a burner that heats it evenly, and getting the rice right for dozens of people takes experience. Our guide to cooking paella for a crowd explains how.

Planning for every diet

Nearly every event has some special diets. To plan for them:

  • Ask about diets and allergies on your invitation or RSVP
  • Choose two or three paellas so every guest has a choice
  • Make sure each pan is labelled
  • Tell us about coeliac guests specifically

Any staff you book serve and clear, so you can enjoy your guests.

Tapas or canapés make a good start while the paella cooks.

Why live cooking beats a buffet

Plated meals need a kitchen and a bigger team. Live paella needs only a level, ventilated spot and permission to cook, and gives guests something to watch. Compared with a plated meal, live paella is frequently good value, as there is no kitchen to hire and fewer staff to pay. We’ll send you a quote.

12 questions to ask before you book

What happens on the day

The paella is cooked in huge, shallow pans over gas burners. It needs a level spot with some shelter and good ventilation, which we agree with you beforehand. In Staplecross, the sun sets at about 9:15pm in late June and about 7:00pm in late September, so summer evening service is normally in daylight. For winter events, when it is dark by about 3:55pm, we need lighting at the cooking spot.

  1. Send us your date, numbers and venue.
  2. We plan the menu with you, including every diet.
  3. We arrive early to set up the burners and pans.
  4. The sofrito, stock and rice go in, and guests gather to watch.
  5. We serve hot from the pan and clear our cooking area.

Before we arrive

  • Let us know who to talk to on the day
  • Leave space around the cooking area
  • Have a level space ready for the pans
