Live paella catering in Fortis Green

Cook it yourself or book a caterer?

Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right for dozens of people takes experience. Read how to cook paella for a crowd.

How our paella catering works in Fortis Green

Watching it cook is part of the experience. Guests gather round as the sofrito sizzles and the saffron colours the rice, and the aroma does the rest. Whether it’s office lunches and staff parties and fairs, fêtes and festivals, we will put together a menu of black rice, vegan paella and chicken and chorizo paella and more.

Gardens in London can be narrow, but a level spot away from fences and trees is generally all we need. For an event in Fortis Green, tell us where we can park to unload. Everything is cooked from scratch at your event, never made in advance and reheated, and served as soon as it is ready.

About the dishes

Black rice

Black rice looks dramatic and tastes of the sea, and is popular with adventurous guests.

Paella Valenciana

In Valencia, the recipe is fiercely debated. The traditional pan has chicken, flat green beans and butter beans.

Step by step

The paella is cooked in giant, shallow pans over gas burners. It needs a level spot with some shelter and good ventilation, which we agree with you beforehand. Around midsummer it stays light in Fortis Green until about 9:20pm; by late September sunset is nearer 7:05pm, so summer evening service is normally in daylight. In December it is dark by about 3:55pm, so winter events need lighting where we cook.

  1. Send us your date, numbers and venue.
  2. We plan a menu that covers every diet.
  3. We arrive early to set up the burners and pans.
  4. The sofrito, stock and rice go in, and guests gather to watch.
  5. Service is straight from the pan, then we pack down.

Preparing for the day

  • Name one person we can ask on the day
  • Make sure the spot is clear of anything flammable
  • Confirm the venue is happy with live cooking

Your questions about paella catering in Fortis Green

Can you cook in Cherry Tree Wood?

Only with permission from the park’s owner, usually the council. Check with them, and we will provide our paperwork.

Can you cater a reception after a service at United Reformed Church?

Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Churches rarely have space for live cooking, so the meal is generally elsewhere. Send us the reception address.

What happens if it rains?

Rain doesn’t stop us, as long as there is a ventilated cover. We’ll make a plan B with you.

What equipment do you bring?

We bring the pans, burners and ingredients. You provide a suitable spot and access.

How far ahead should we book?

Early, particularly for summer Saturdays. Ask about your date even if it is soon.

Do you have a kids’ option?

Yes. Children often love a simple chicken paella. Include children in your numbers.

Do you cover Fortis Green?

We do. We cook at events in Fortis Green and across Greater London. Tell us your date and we’ll check availability.

Where do you cater?

London and the South East: Kent, Surrey, Sussex, Hampshire, Berkshire, Buckinghamshire, Oxfordshire and the Isle of Wight.

Why choose paella catering in Fortis Green?

Paella compared with other options

Plated meals need a kitchen and a bigger team. Live paella needs only a level, ventilated spot and permission to cook, and gives guests something to watch. Premium seafood costs more than chicken or vegetables, so the menu you choose affects the price. We will suggest options to suit your budget.

What you get with us

  • Fast service from the pan
  • Food that becomes part of the entertainment
  • Paella cooked from scratch on site
  • Separate pans for vegetarian, vegan, gluten-free and halal guests

Working with your venue

If your event is in a public space, such as a park, check what permission you need first. We can send whatever the landowner or council needs from us.

Planners and coordinators can contact us directly, and we will keep everyone informed on the day.

Dietary needs and planning tips

Paella is one of the easiest dishes for mixed diets, because each paella is cooked in its own pan. Here are a few tips for planning:

  • Ask for labels on each pan
  • Tell us about coeliac guests specifically
  • Plan seating for most guests: paella is easiest eaten sitting down
  • Put allergy details in writing

Paella is at its best straight from the pan, so we serve when guests are ready.

Bread, salad and lemon wedges make the meal go further.

Space, weather and the venue

Most outdoor spaces and many venues work for live paella, but a few things matter:

  • Clearance from fences, hedges, branches and anything flammable
  • Open air or a well-ventilated covered spot
  • Access for unloading near the cooking spot

As a London location, Fortis Green is inside the Ultra Low Emission Zone, and parking takes planning: tell us about parking bays, permits or a driveway.

If in doubt, send us a picture of the spot and we’ll advise before you book.
