Planners, venues and businesses
Many venues have rules for outside caterers: cooking areas, access times and documents. Send us your venue’s requirements and we will follow them.
Wedding planners and venue coordinators are welcome to contact us directly, and we’ll keep you updated on timings and set-up.
Dietary needs and planning tips
Nearly every event has some special diets. To cater well for them:
- Ask about diets and allergies with your RSVPs
- Count day and evening guests separately
- Choose pan-side or table service
- Ask whether your venue allows outside caterers
We clear our cooking area away afterwards; any staff stay as long as agreed.
Canapés during the photos keep hunger at bay.

How the day works
We work to your timings. If things run behind, we adjust the cooking so it is served at its best. For a summer wedding in Sun Rising, the sun sets at about 9:30pm in late June and about 7:10pm in late September, so an evening paella for evening guests is generally served in daylight in high summer. For autumn and winter weddings, when it’s dark by about 3:55pm in December, plan lighting for the cooking area.
- Tell us your date, venue and numbers.
- Together we plan each course.
- Timings are agreed with your venue.
- On the day, we cook and serve each course.
- We clear our area; staff stay as booked.
How to prepare

- Keep the cooking spot clear of fences, hedges and branches

Where we can cook in Sun Rising
Live paella is cooked over gas burners in large pans, so the cooking area needs a little planning. These are the things we check:
- The venue’s permission for live cooking
- Somewhere close to park and unload
- A safe distance from anything that could catch
If you’re unsure, send a photo of the space and we’ll say what we think.

Should I cook it myself?
If you do cook yourself, test the pan and burner together beforehand, have hot stock ready, and leave the rice alone once it’s in. And keep children and pets well away from the burner.
Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.
