How it works
When we arrive, we set up the burners and pans and start cooking the sofrito and stock. The rice goes in about 20 minutes before serving, so the timing is planned around your event. In Halland, midsummer sunset is about 9:15pm, and by late September it is nearer 7:05pm, which means evening paella is normally served in daylight in June and July. For autumn and winter weddings, when it is dark by about 3:55pm in December, plan lighting for the cooking area.
- Tell us your date, venue and numbers.
- We plan your menu course by course.
- Timings are agreed with your venue.
- We cook live on the day and serve each course.
- We pack down, and staff stay as agreed.

Halland: your questions answered
Is Halland too small for live paella?
No, we cook in small places too. Let us know about access and parking.
Is Halland close to London?
About 41 miles from central London, and we cover it as standard.
Do you have a kids’ option?
Children are welcome. Tell us how many and roughly how old, and we’ll plan for them.
How many different paellas?
Two or three is usual: a meat or mixed paella, a seafood paella and a vegetable or vegan one. We’ll suggest a split based on your guests.
Will you talk to our venue?
Yes, and it saves you passing messages. Put us in touch and we will agree the details.
Do you cater for coeliacs?
We can, if you tell us in advance. The rice is gluten-free, but stocks and chorizo can contain gluten, so we make a separate gluten-free pan.
Where do you cater?
London and the South East: Kent, Surrey, East and West Sussex, Hampshire, Berkshire, Bucks, Oxfordshire and the Isle of Wight, including Halland.
What space do you need to cook?
Level ground for the burners, pans and a table, in the open air or a ventilated covered area, and the venue’s permission for live cooking.

Live paella or other catering?
Food trucks serve one order at a time, which can mean long queues at a wedding. Paella pans serve many guests quickly. The price depends on your guest numbers, the menu and how many courses you choose, plus any staff, crockery and travel. Every event gets its own quote.

Should I cook it myself?
Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather be with your guests, we will do the cooking.
You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.
Planning the cooking area
The right spot keeps things safe and helps the paella cook evenly. We need:
- A cooking spot outside the marquee, not inside it
- The venue’s permission for live cooking
- Level ground for the pans and burners
Not sure about your space? Send us a photo and we’ll tell you honestly.
