The paella is cooked in giant, shallow pans over gas burners. We need a level, ventilated spot, which we agree with you beforehand. For a summer wedding in Dunk's Green, the sun sets at about 9:20pm in late June and about 7:00pm in late September, which means evening paella is normally served in daylight in June and July. For autumn and winter weddings, when it is dark by about 3:55pm in December, plan lighting for the cooking area.
