Diets, allergies and planning

A little planning makes sure everyone can eat. Here’s how:

  • Collect dietary needs on the RSVP
  • Decide whether guests queue at the pans or are served at the tables
  • Count day and evening guests separately
  • Send us the running order and speech times

Evening guests can be served from fresh pans later on, timed for after the first dance.

Canapé tapas with the drinks reception keep guests going during photos.

Organising a club, school or community event in Cock Marling? Live paella feeds a crowd quickly and suits most diets. Tell us about the event and we’ll suggest a menu.

For big numbers, we plan pans and serving points to keep queues short, so guests are fed quickly. Let us know how long the food break is.

What’s in the pans

Paella wedding breakfast

Paellas for every guest, served straight from the pan.

Evening paella

A second round of paella for the evening, quick to serve and filling.

Planning the cooking area

We cook in large pans over gas burners, so the cooking area needs a little planning. These are the things we check:

  • Flat, firm ground for the cooking area
  • Clearance from fences, hedges, branches and anything flammable
  • An open-sided catering gazebo next to the marquee

If you are unsure, send a photo of the space and we will say what we think before you book.

How the day works

Here’s how the day typically runs: we set up the pans and start the sofrito, the rice cooks in front of your guests, and we serve straight from the pan when you are ready to eat. In Cock Marling, midsummer sunset is about 9:15pm, and by late September it’s nearer 7:00pm, which means evening paella is typically served in daylight in June and July. Later in the year, plan lighting: in December it’s dark by about 3:55pm.

  1. Send us your wedding date, venue and numbers.
  2. Together we plan each course.
  3. We agree timings with you and your venue.
  4. On the day, we cook and serve each course.
  5. We pack down, and staff stay as agreed.

Before we arrive

  • Leave space around the cooking area
  • Confirm the venue is happy with live cooking
  • Give us your final numbers and diets

Our caterer checklist

Why choose live paella in Cock Marling?

A hog roast is popular at weddings, but harder for vegetarian, vegan and halal guests. Separate paella pans cover every diet. Live paella often compares well with a sit-down meal, as there’s no kitchen to hire and fewer staff to pay. We’ll send you a quote.

Why us?

  • Sangria and bar staff available
  • Hot food served quickly from the pan
  • No hidden extras in your quote
  • Separate pans for vegetarian, vegan, gluten-free and halal guests

Can I cook paella for a crowd myself?

Hiring a pan and burner is one option, but there is shopping, prep and hours of cooking. A caterer handles all of that.

Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.
