Paella catering in BR8

How paella catering works in BR8

You can keep it simple or build a full menu: paella on its own, or with canapés, table tapas, desserts and sangria. We will recommend what fits your event. On the menu are vegetable paella, mixed paella and black rice, and typical bookings are for fairs, fêtes and festivals and company summer parties.

When we arrive, we set up our cooking area, light the burners and start the sofrito. Once the rice goes in, it takes about 20 minutes, so we time everything to your schedule.

  1. Start with the date, the place and the numbers.
  2. We come back with paellas to suit your guests, plus any extras.
  3. A week or so before, we confirm the plan.
  4. We set up, cook from scratch and keep an eye on your timings.
  5. Guests are served from the pan, and our area is cleared afterwards.

Planning live paella in BR8

From Swanley, Hextable and Crockenhill to 5 villages and hamlets, events across BR8 range from town-centre venues to gardens and fields, and live paella suits every kind of setting. In towns, plan parking and access; in villages, tell us about lanes and ground.

Swanley: For guests coming by train, Swanley station is in Swanley itself. School fairs and fundraisers, for a school such as St Bartholomew's Catholic Primary School, can book us as a food stall. In Swanley, the sun sets at about 9:20pm in late June and about 7:05pm in late September, so summer evening service is normally in daylight. For winter events, when it’s dark by about 3:55pm, we need lighting at the cooking spot.

Before you choose a spot

No two venues are the same, so we will ask about yours when you get in touch. In general, we need:

  • Parking close enough to carry equipment
  • Good ventilation: outdoors, or an open-sided cover
  • The venue’s permission for live cooking

What’s in the pans

Vegetable and vegan paella

A slow sofrito, seasonal vegetables and a good vegetable stock make a paella that stands on its own. Vegan versions use plant-based stock.

Seafood paella

Seafood paella starts with a good fish and shellfish stock. The shellfish is added late so it stays tender.

Occasions we cook for in BR8

Live paella feeds a crowd quickly and suits most diets, so it suits all kinds of occasions. It also gives guests something to watch and talk about.

Big or small, live paella works well. Typical bookings include:

  • Weddings and evening receptions
  • Company summer parties
  • Summer garden parties
  • Big birthdays

Is live paella right for you?

Compared with a hog roast or barbecue, live paella is easier for vegetarian, vegan and halal guests, thanks to separate pans. Service from the pan keeps queues moving.

BR8: your questions answered

Is the paella gluten-free?

We can cook a gluten-free paella in its own pan. Let us know about coeliac guests in advance so we take the right care.

What space do you need to cook?

Less than you might think: a flat spot away from anything flammable, with space to serve. If in doubt, send a photo.

Who clears up?

We pack down our cooking area after service. Clearing guests’ plates and tables can be added with waiting staff.

Is it really cooked live?

Yes. We arrive with everything we need and cook on the day, serving it hot from the pan.

How do you work out quantities?

Pans are sized to your numbers and other courses. Let us know about any other food. See how much paella per person.

Can you cater for children?

Children are welcome. Let us know numbers and ages, and we’ll plan for them.

Is halal food available?

Yes, on request. Let us know your halal numbers, and it’s cooked separately.
