Live paella across BN25: what to know

BN25 covers everything from Seaford, Tide Mills and Bishopstone to 4 small villages and hamlets, and live paella works in all of them. In towns, plan parking and access; in villages, tell us about lanes and ground. Parts of BN25 are within a few miles of the South Downs National Park, where some venues have extra rules about vehicles and cooking. 5 of the places we cover in BN25 are within about 6 miles of the sea, where we always plan shelter from the wind, and seafood paella is popular.

Seaford: For guests coming by train, Seaford station is about 0.5 miles away. School fairs and fundraisers, for a school such as Seaford Primary School, can book us as a food stall. Around midsummer it stays light in Seaford until about 9:15pm; by late September sunset is nearer 7:05pm, so summer evening events are usually served in daylight. For winter events, when it’s dark by about 3:55pm, we need lighting at the cooking spot.

Working with your venue

Planning an event for a club, school or charity in BN25? Live paella feeds a crowd quickly and suits most diets. Tell us about the event and we’ll suggest a menu.

Many venues have rules for outside caterers: cooking areas, access times and documents. Tell us what your venue needs and we’ll work to it.

Catering for every guest

Most events have a mix of diets. To plan for them:

  • Have seats for most of your guests
  • Ask about diets and allergies on your invitation or RSVP
  • Flag any coeliac guests, not just gluten-free preferences
  • Confirm allergies by email

If you’ve booked staff, they’ll serve, clear and help keep things moving, so you can relax.

Add canapé tapas with the drinks or table tapas as a starter as the rice cooks.

DIY paella versus live catering

Doing it yourself saves money, but the host ends up stuck at the stove. Booking us means you get the show without the stress.

For a small group, cooking yourself can work well. For larger numbers, mixed diets or a wedding, a caterer takes the pressure off, and keeps vegetarian and allergy-safe pans separate.

The menu, dish by dish

Vegetable and vegan paella

The vegetable pan is a dish in its own right: artichokes, beans, peppers and saffron, cooked in its own pan.

Seafood paella

Seafood paella starts with a good fish and shellfish stock. Shellfish goes in towards the end so it stays tender.

Planning the cooking area

We’ll be honest if a space will not work. The main points are:

  • Good ventilation: outdoors, or an open-sided cover
  • Access for unloading near the cooking spot
  • The venue’s permission for live cooking

BN25 questions

How much paella per person?

We size the pans for your numbers and the rest of the menu. Let us know about any other food. Our guide to portions explains more.

Can you cook in the rain?

We need a covered spot, like a gazebo or open-sided marquee. We plan for rain with you in advance.

Do you offer halal options?

Yes, on request. Let us know your halal numbers, and we will cook a separate pan.

Which paellas do you recommend?

It depends on your guests. A chicken or mixed paella is generally the most popular, alongside seafood and vegetable or vegan pans.

Do you do starters?

Yes, it’s the classic pairing. Tapas first, paella to follow.

Do you cook inside?

Generally we cook outdoors or under a ventilated cover, because we use gas burners. Some venues have suitable spaces; we will check with you and the venue.

Can you do gluten-free paella?

We can, if you tell us in advance. Rice is naturally gluten-free, but stock and some ingredients may not be, so we make a separate gluten-free pan.

  • Cooked live in giant pans at your event
  • Vegetarian, vegan, gluten-free and halal options
  • Paella, tapas, canapés and desserts
  • Sangria, bar staff, crockery and waiting staff
