The Valley: your questions answered

Is The Valley too small for live paella?

Not at all. We cater in villages and hamlets as well as towns. Tell us about lanes, gates and parking.

Which station should guests use for The Valley?

Charing station, about 3.2 miles south of the centre.

When should we book?

The sooner the better. Peak dates go quickly, so contact us early.

What space do you need to cook?

Level ground for the burners, pans and a table, in the open air or a ventilated covered area, plus the venue’s agreement to cooking.

Can you cook in my back garden?

Generally, yes, if there is a flat, open spot away from fences and branches. Send us a photo of the space.

Do you do vegan paella?

Of course. Vegetarian and vegan paellas are cooked in separate pans, alongside the meat and seafood pans.

How early should we book?

Early is best, but ask even if it’s soon. We will check availability right away.

Do you take everything away?

We pack down our cooking area after service. Waiting staff can clear tables if you book them.

Before you choose a spot

Safety and good cooking both depend on the spot we use. We need:

  • A picture of the garden helps us check the space
  • Open air or a well-ventilated covered spot
  • The venue’s permission for live cooking

If you are unsure, send a picture of the space and we’ll say what we think.

Should I cook it myself?

Hiring a pan and burner is one option, but there is shopping, prep and hours of cooking. We take care of all of it.

Cooking paella for a crowd yourself is possible, but it’s harder than it looks. Large pans need the right burners, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.

Prices and what affects them

Live paella pricing is straightforward once we know the basics:

  • How many courses
  • The paellas you choose
  • Travel, parking and access
  • Waiting and bar staff

Premium seafood costs more than chicken or vegetables, so your choice of paellas affects the total. Tell us your budget and we will suggest a menu.

Getting an accurate quote

When you get in touch, it helps to tell us:

  • The date and rough timings
  • Roughly how many adults and children
  • What the venue already provides
  • The venue or postcode

The process

Watching it cook is half the fun. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook while your guests chat. A summer party in The Valley stays light until about 9:15pm at midsummer, which gives a garden party a long evening. In late September it is dark by about 7:00pm; add lights for the evening.

  1. Tell us when and where, and how many.
  2. We suggest paellas and extras and send a quote.
  3. We arrive before your guests and set up.
  4. The paella cooks while your guests chat.
  5. We serve from the pan and pack down.

Before we arrive

  • Name one person we can ask on the day
  • Make sure we can park close by to unload
  • Leave space around the cooking area
