12 questions to ask before you book

Should I cook it myself?

Cooking it yourself? Test your pan and burner first, keep the stock hot, and do not stir once the rice goes in. And keep children and pets well away from the burner.

You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.

Why choose live paella in Stanton Harcourt?

Food trucks and street-food vans serve one portion at a time. A paella pan serves many portions quickly, so everyone can eat at the same time. Larger events typically cost less per head, because the cooking set-up is similar for different sizes of event. Give us your numbers and we will quote.

Why us?

  • Waiting staff and crockery on request
  • Add tapas, canapés and Spanish desserts
  • Cooking your guests will gather round to watch
  • Fast service from the pan

How the day works

It’s a relaxed, well-organised set-up. Arrival and serving times are agreed beforehand, set up our cooking area, and cook and serve without fuss. In Stanton Harcourt, the sun sets at about 9:30pm in late June and about 7:10pm in late September, so summer evening events are usually served in daylight. In December it is dark by about 3:55pm, so winter events need lighting where we cook.

  1. Send us your date, numbers and venue.
  2. We plan a menu that covers every diet.
  3. We arrive early to set up the burners and pans.
  4. The sofrito, stock and rice go in, and guests gather to watch.
  5. We serve hot from the pan and clear our cooking area.

Preparing for the day

  • Check the venue allows live cooking
  • Keep the cooking spot clear of fences, hedges and branches
  • Ensure we can park close by to unload

About the dishes

Black rice

Arroz negro is coloured and flavoured with squid ink, traditionally with alioli. It’s a striking addition to a seafood menu.

Paella Valenciana

Paella Valenciana is the original: chicken, beans and saffron, rather than seafood. It’s a favourite with guests who don’t eat fish.
