How to compare caterers

Paella catering for your event in Guestling Green

Live paella works almost anywhere with a level, ventilated spot: a garden, marquee, barn, courtyard or field. Whether it’s festivals, fairs and school events and garden get-togethers, we can cook vegetable paella, chicken and chorizo paella and seafood paella and more.

Somewhere as small as Guestling Green, a garden or field is frequently the venue. Tell us about narrow lanes or long drives and we will plan for them, and a firm spot near where we park makes set-up easier. Everything is cooked from scratch at your event, never made in advance and reheated.

The process

Your timings come first. If things run behind, we hold the paella at the right stage so it’s served at its best. In Guestling Green, the sun sets at about 9:15pm in late June and about 7:00pm in late September, so summer evening service is normally in daylight. For winter events, when it’s dark by about 3:55pm, we need lighting at the cooking spot.

  1. Start with the date, the place and the numbers.
  2. We come back with paellas to suit your guests, plus any extras.
  3. A week or so before, we confirm the plan.
  4. On the day we cook live, timed around your event.
  5. We serve, then leave our area tidy.

Before we arrive

  • Check the venue allows live cooking
  • Give us a contact for the day
  • Have a gazebo or cover ready if rain is likely

Your questions about paella catering in Guestling Green

Can you cook in Speckled Wood?

Only if the landowner, usually the council, allows it. Check with them, and we will provide our paperwork.

What about events near the coast?

Yes, with a sheltered cooking spot. Wind is the main issue on the coast, so we plan shelter.

Do you provide plates and cutlery?

We can. Let us know what you have, and we will quote for the rest.

Is the paella gluten-free?

A gluten-free pan is no problem. Tell us about any coeliac guests when you book so we can plan it carefully.

Can you cook indoors?

Only in a suitable, well-ventilated area with the venue’s permission. Most events have us cooking outside or in a doorway or courtyard.

Are premium seafood options available?

We will talk through seafood options when we plan your menu.

When do you arrive?

That depends on your menu and numbers. We’ll agree arrival, cooking and serving times with you.

How much space do you need?

Not a lot: a flat spot away from anything flammable, with space to serve. Send us a photo if you are not sure.

Catering for every guest

A little planning makes sure everyone can eat. Here’s how:

  • Ask for labels on each pan
  • Send allergies to us in writing
  • Add a dietary question to your invitations
  • Mention any other courses or food

The rice takes about 20 minutes once it goes in, so we start it at the right moment for your event. If plans change, tell us and we’ll adjust.

Add canapé tapas with the drinks or table tapas as a starter while the paella cooks.

Planners, venues and businesses

For big numbers, we plan pans and serving points to keep queues short, so guests are fed quickly. Let us know how long the food break is.

Events in public spaces, like parks, generally need permission. We can send whatever the landowner or council needs from us.

How we price paella catering

Here’s what makes the biggest difference to the price:

  • How many courses
  • Timings and hours
  • The paellas you choose
  • The number of people

Getting an accurate quote

Here’s what makes a quick, accurate quote possible:

  • A picture of where we’d cook
  • Vegetarian, vegan, gluten-free, halal and allergy numbers
  • The venue or postcode
  • Anything your venue supplies

Getting a quote is simple: tell us the date, place, numbers and any dietary needs. We will come back with a clear quote and a suggested menu.

Why live cooking beats a buffet

Food trucks and street-food vans serve one portion at a time. A paella pan serves many portions quickly, so everyone can eat at the same time. If you have a budget in mind, tell us, and we’ll put together a menu that fits. A simple menu can still feel generous.

What you get with us

  • Catering across East Sussex, including Guestling Green
  • Crockery and waiting staff if you need them
  • Tapas, canapés and desserts if you want them
  • Sangria, plus bar staff for your own drinks

Before you choose a spot

Safety and good cooking both depend on the spot we use. We look for:

  • Flat, firm ground for the cooking area
  • Parking close enough to carry equipment
  • Good ventilation: outdoors, or an open-sided cover

Not sure about your space? Send us a photo and we will tell you honestly.

Cook it yourself or book a caterer?

Cooking paella for a crowd yourself is possible, but it’s harder than it looks. Large pans need the right burners, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.
