Paella catering in Fairlight, cooked live
There is something generous about paella: giant pans, saffron colour and a toasted crust that everyone fights over. It makes the food an event in itself. Whether it’s birthday celebrations and anniversary celebrations, we can cook paella Valenciana, vegan paella and black rice for your guests.
In a rural place like Fairlight, the setting does a lot of the work: a giant pan in a garden or field fits perfectly. Tell us about access and the ground. We bring everything we need to cook, and pack down our cooking area when service is finished.

Catering for every guest
Good planning keeps every guest safe and happy. Here’s how:
- Pick a mix of paellas to cover every diet
- Let us know if anyone has coeliac disease
- Mention any other courses or food
- Have seats for most of your guests
On the day, you shouldn’t have to think about the food. We arrive in good time, set up, cook and serve, and stay in touch with your venue about timings.
Spanish desserts such as churros or crema catalana finish the meal.
Planning live paella in Fairlight
Fairlight is about 4 miles east of Hastings, in East Sussex. For paella catering in Fairlight, we plan around your venue and timings: a clear quote, agreed timings and paella cooked live on the day. We cover 289 places in East Sussex, from the larger towns to small villages. We cook right across the region, from Fairlight to Brighton (34 miles away).
School fairs and fundraisers, for a school such as The Hastings Academy, can book us as a food stall. Parks such as Speckled Wood usually need the owner’s permission for cooking, so ask before you plan a party there. Fairlight is within about 4 miles of the sea, and seafood paella always feels right near the sea. Sea breezes can be strong, so we plan a sheltered cooking spot.
This part of East Sussex takes in TN35. Whether your event is on Hill Road, The Close and Lower Coastguard Lane or a nearby road, we will bring the pans to you. If your venue is just outside Fairlight, we also cover Fairlight Cove (1 mile east), Friar's Hill (1 mile north), Guestling (1 mile north-west), Bachelor's Bump (1 mile west) and Guestling Green (1 mile north-west). We also cook in nearby towns such as Hastings (4 miles west), Bexhill-on-Sea (8 miles west), St Leonards (4 miles west), Hastings Old Town (3 miles south-west), Belmont (3 miles south-west) and Langney (15 miles west).
Well-known places in the area include Hastings Old Town Hall Museum (2.7 miles south-west) and Conquest Hospital (3.4 miles west). The countryside around Fairlight includes Church Wood and Robsack Wood.

Fairlight questions
Can you cook in Speckled Wood?
Only if the landowner, usually the council, allows it. Ask them first, and we’ll send any information they need.
We are having a ceremony at The Parish Church of St Andrew: can you cater afterwards?
Yes, at a nearby garden, marquee or hall where we can cook. Churches rarely have space for live cooking, so the meal is generally elsewhere. Send us the reception address.
Is live paella good for a large crowd?
Very much so. We size pans and serving points to your guest list.
Can paella be the only main course?
It can be. Paella with bread and salad makes a full main course.
What do you need at the venue?
Less than you might think: a flat spot away from anything flammable, with space to serve. If in doubt, send a picture.
Do you bring everything you need?
We bring all the cooking equipment. Let us know what your venue has, like tables or crockery.
Can you cook in the rain?
We cook under cover, such as a gazebo, marquee or open-sided barn with good ventilation. We plan for rain with you in advance.
What about pudding?
We do. Churros, crema catalana and tarta de Santiago are popular choices.
What affects the price in Fairlight
Two events with the same number of guests can cost different amounts, because of:
- The number of people
- Staff: cooks, waiting staff and bar staff
- Extra courses such as canapés, tapas and dessert
- Parking and unloading
If you have a budget in mind, tell us, and we will put together a menu that fits. Even a simple menu can be a feast.
What to tell us
The more we know about your event, the better we can plan. Please include:
- Diets and allergies you know about
- Which courses you have in mind
- What the venue already provides
- The date and rough timings
We quote for each event separately, so the price fits what you actually want. To ask for one, fill in our quote form.
Planners, venues and businesses
For big numbers, we plan pans and serving points to keep queues short, so guests are fed quickly. Let us know how long the food break is.
If you’re organising for someone else, whether you are a planner, an office manager or an event organiser, we’ll work directly with you and the venue. It saves passing messages back and forth.
Why choose paella catering in Fairlight?
Live paella feeds a crowd quickly and suits most diets, which is why it works for so many occasions. It also gives guests something to watch and talk about.
These are some of the occasions we cater in Fairlight and East Sussex:
- Birthday celebrations
- Summer garden parties
- Leaving dos and retirements
- Weddings and evening receptions
For guests coming by train, the nearest station is Three Oaks station, about 2.2 miles north-west.
What your quote should include
- How dietary needs and allergies are handled
- Staff numbers and hours
- Space, access and power needs
- Whether crockery, cutlery and napkins are included
How it works
We cook over gas burners in wide, shallow pans. We need a level, ventilated spot, which we agree with you beforehand. Around midsummer it stays light in Fairlight until about 9:15pm; by late September sunset is nearer 7:00pm, so summer evening events are normally served in daylight. In December it’s dark by about 3:55pm, so winter events need lighting where we cook.
- You share your date, numbers and venue.
- We plan the menu with you, including every diet.
- We arrive in good time to set up.
- The sofrito, stock and rice go in, and guests gather to watch.
- We serve hot from the pan and clear our cooking area.

Planning help
Cook it yourself or book a caterer?
Doing it yourself saves money, but the host ends up stuck at the stove. With live paella catering, you get the theatre without the work.
Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather be with your guests, we will do the cooking.
What’s in the pans
Black rice
Black rice looks dramatic and tastes of the sea.
Mixed paella
A mix of chicken and seafood.
Why choose live paella in Fairlight?
With a barbecue, food comes in waves. Paella is ready all at once, so everyone eats together. Seafood and premium ingredients cost more than chicken or vegetable paellas, so your choice of paellas affects the total. We will suggest options to suit your budget.
