Live paella or other catering?
Compared with a hog roast or barbecue, paella makes vegetarian, vegan and halal guests easier to cater for, thanks to separate pans. Service from the pan keeps queues moving. Cost depends on guest numbers, the menu and the courses, along with staff, extras and travel. We quote for each event individually.
Why Flimwell hosts choose us
- Served hot, straight from the pan
- Waiting staff and crockery on request
- Every diet catered for, pan by pan
- Live cooking, not reheated food

How the day works
We cook over gas burners in wide, shallow pans. It needs a level spot with some shelter and good ventilation, and we agree where that is before the day. Evenings in Flimwell stay light until about 9:15pm in June, but by late September sunset is around 7:00pm; once it is dark, we need light to cook and serve by.
- Start with the date, the place and the numbers.
- We come back with paellas to suit your guests, plus any extras.
- A week or so before, we confirm the plan.
- On the day we cook live, timed around your event.
- Guests are served from the pan, and our area is cleared afterwards.
Preparing for the day
- Let us know the timings for the day
- Ensure the spot is clear of anything flammable
- Name one person we can ask on the day

Dishes our guests love
Black rice
Black rice looks dramatic and tastes of the sea, and is popular with adventurous guests.
Seafood paella
Seafood paella starts with a good fish and shellfish stock. Shellfish goes in towards the end so it stays tender.
Catering for every guest
We take diets and allergies seriously. Help us by following these steps:
- Put allergy details in writing
- Add a dietary question to your invitations
- Have seats for most of your guests
- Make sure each pan is labelled
Let the paella rest for a few minutes before serving, which is when we generally call guests over.
Add canapé tapas with the drinks or table tapas as a starter while the paella cooks.
