What’s in the pans

Paella Valenciana

Paella Valenciana is the original: chicken, beans and saffron, rather than seafood. It’s often the most popular pan at an event.

Black rice

Black rice gets its colour from squid ink, and is generally served with alioli. It’s a striking addition to a seafood menu.

Occasions we cook for in Chilton Foliat

Outdoor events and live paella go together: it’s cooked in the open, served hot and eaten together.

Big or small, live paella works well. Common bookings include:

  • Big birthdays
  • Garden get-togethers
  • Christenings and family gatherings
  • Retirement celebrations

School fairs and fundraisers, for a school such as Chilton Foliat Church of England Primary School, can book us as a food stall.

Our caterer checklist

Prices and what affects them

The same guest numbers can mean different prices, depending on:

  • The paellas you choose
  • Starters, canapés and desserts
  • Guest numbers
  • Staff: cooks, waiting staff and bar staff

Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you only pay for what you want.

Getting an accurate quote

The more we know about your event, the better we can plan. Please include:

  • Expected numbers
  • The courses you’d like
  • The address or venue name
  • The date and time of the event

It’s easy to get a price: share your date, venue, numbers and diets. We’ll send a clear, itemised quote.

DIY paella versus live catering

Not sure whether to cook yourself or book a caterer? Consider your numbers, your guests’ diets and your own time. We’re happy to give you a quote to compare.

Hiring a pan and burner is one option, but you’ll still need to source ingredients, prep and cook for hours. A caterer handles all of that.

How the day works

We cook over gas burners in wide, shallow pans. It needs a level spot with some shelter and good ventilation, and we agree where that is before the day. Around midsummer it stays light in Chilton Foliat until about 9:25pm; by late September sunset is nearer 7:10pm, so summer evening events are normally served in daylight. For winter events, when it’s dark by about 4:00pm, we need lighting at the cooking spot.

  1. You share your date, numbers and venue.
  2. We plan a menu that covers every diet.
  3. We arrive in good time to set up.
  4. The sofrito, stock and rice go in, and guests gather to watch.
  5. Service is straight from the pan, then we pack down.

Before we arrive

  • Confirm the venue is happy with live cooking
  • Let us know who to talk to on the day
  • Leave space around the cooking area
