For planners, venues and organisers
Venues frequently have their own rules about outside caterers: cooking areas, access times and documents. Tell us what your venue needs and we will work to it.
Planners and coordinators can contact us directly, and we’ll keep everyone informed on the day.
Space, weather and the venue
The right spot keeps things safe and helps the paella cook evenly. We look for:
- Access for unloading at set-up
- Your arrangements for power, water and waste
- A level pitch on firm ground
If you’re unsure, send a picture of the space and we’ll say what we think.

How we price festival paella catering
There is nothing hidden: the price is based on:
- The length of service
- Chicken, vegetable or premium seafood
- How many courses
- Whether you need crockery
Comparing caterers? Look at what each quote includes: staff, crockery, sides, travel and VAT. We itemise ours.
What to tell us
You don’t need every detail fixed to get a quote, but these help:
- Which courses you have in mind
- The address or venue name
- Diets and allergies you know about
- Your date and when you want to eat
Send us the date, your venue or BN7 postcode and guest numbers, plus any dietary needs, and we’ll reply with a menu suggestion and a quote. To get started, send us your details through our quote form.
Catering for every guest
Paella is one of the easiest dishes for mixed diets, because each paella is cooked in its own pan. A few tips:
- Check every diet is covered by the line-up
- Book crew catering in advance
- Check allergen info is on display
- Put all trader information in one pack
At the end, we clear the pitch and leave it clean.
Vegan paella alongside the rest.

Rodmell questions
Do you cater in the South Downs National Park?
Yes. Some venues there have rules about vehicles, ground and cooking, so check with yours. We’ll follow the site rules.
Is Rodmell too small for live paella?
Not at all. We cater in villages and hamlets as well as towns. Tell us about lanes, gates and parking.
Do you cater in Rodmell?
Yes. We cover London and the South East, including Rodmell and the rest of East Sussex. To check your date, send us your details through our quote form.
Do you have vegan options at events?
Absolutely. The vegan pan is cooked separately.
Should we have more than one paella?
Two or three is usual: a meat or mixed paella, a seafood paella and a vegetable or vegan one. We will help you decide the split.
Do you cater for coeliacs?
Yes, on request. The rice is gluten-free, but stocks and chorizo can contain gluten, so we cook a gluten-free paella separately.
What happens if it rains?
Rain doesn’t stop us, as long as there is a ventilated cover. We will make a plan B with you.
Do you cater for vegetarian guests?
Of course. Vegetarian and vegan paellas are cooked in separate pans, alongside the meat and seafood pans.
The process
We arrive in good time before you want to eat, unload, set up the burners and prepare the stock. Guests normally gather round to watch while it cooks. At midsummer, events in Rodmell stay light until about 9:15pm, so evening trading normally finishes in daylight in high summer. For winter markets, dark by about 3:55pm, the pitch needs lighting.
- Tell us about the event, the crowd and the pitch.
- We reply with our menu, prices for visitors and requirements.
- We send the documents the event asks for.
- On the day, the pans are on before the busiest hours.
- When trading ends, the pitch is cleared and left clean.
Before we arrive
- Have a level space ready for the pans
- Confirm the venue is happy with live cooking
- Let us know who to talk to on the day
