For a stall that adds atmosphere, paella is a strong choice. Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you only pay for what you want.

The process
The paella is cooked in huge, shallow pans over gas burners. We need a level, ventilated spot, and we agree where that is before the day. At midsummer, events in Lindfield stay light until about 9:20pm, so evening trading usually finishes in daylight in high summer. Winter markets, dark by about 3:55pm, need a well-lit pitch.
- Tell us about the event, the crowd and the pitch.
- We reply with our menu, prices for visitors and requirements.
- We send the documents the event asks for.
- We time the first pans for the lunchtime rush.
- At close, we pack down and tidy up.
Preparing for the day
- Have a gazebo or cover ready if rain is likely
- Make sure we can park close by to unload
- Choose a level spot for the cooking area

Planning for every diet
Few dishes handle mixed diets as well as paella, because every paella has its own pan. Here are a few tips for planning:
- Plan seating near the food area
- Put all trader information in one pack
- Book crew catering in advance
- Make allergen information visible at every stall
We cook in full view of visitors, and serve from the pan throughout the event.

Your questions about festival paella catering in Lindfield
Could we have live paella in Eastern Road Nature Reserve?
Only with permission from the park’s owner, normally the council. Ask them first, and we will send any information they need.
Can you cook at venues in the South Downs National Park?
Yes, though some venues in protected landscapes have extra rules; ask your venue. We’ll follow the site rules.
Can you cater for crew and volunteers?
We can. We can cook for crew, volunteers or a hospitality area as well as, or instead of, a public stall.
Can we book you as a trader?
Send us the details, and we’ll reply with our availability and what we need.
Can you bring crockery?
Yes, on request. Crockery, cutlery and napkins, or good-quality disposables can be added to your booking.
Do you need water?
We will confirm our needs once we know the pitch details.
Should we have more than one paella?
Generally two or three, so every guest has a choice. We will recommend a mix based on diets.
Can we add tapas or canapés?
Yes, and it is a popular combination. Tapas first, paella to follow.
Before you choose a spot
Before the day, we’ll agree where we cook. A good spot ticks these boxes:
- Flat, firm ground
- Vehicle access before and after the event
- A pitch away from tents and structures
Not sure about your space? Send us a picture and we’ll tell you honestly before you book.

DIY paella versus live catering
You can hire equipment and do it yourself, but there’s shopping, prep and hours of cooking. A caterer handles all of that.
If you do cook yourself, test the pan and burner together beforehand, keep the stock hot, and leave the rice alone once it’s in. And keep children and pets well away from the burner.
