The process

We arrive in good time before you want to eat, unload, set up the burners and prepare the stock. Your guests are welcome to watch as the paella takes shape. Summer events in Shoreham-by-Sea have daylight until about 9:20pm at midsummer and about 7:05pm by late September, which helps evening trading. Winter markets, dark by about 3:55pm, need a well-lit pitch.

  1. Tell us about the event, the crowd and the pitch.
  2. You get our stall menu and what we need on site.
  3. Paperwork goes over in good time.
  4. We time the first pans for the lunchtime rush.
  5. At close, we pack down and tidy up.

Preparing for the day

  • Check the venue allows live cooking
  • Keep the cooking spot clear of fences, hedges and branches
  • Confirm numbers and diets before the day

Cook it yourself or book a caterer?

Cooking it yourself? Test your pan and burner first, keep the stock hot, and do not stir once the rice goes in. Keep a clear zone around the burner.

Fairs, fêtes and events in Shoreham-by-Sea

Shoreham-by-Sea is about 4 miles west of Brighton and Hove, in West Sussex. From the centre of Shoreham-by-Sea to the outskirts, festival paella catering works the same way: live cooking, separate pans for every diet and a clear price. Shoreham-by-Sea is one of 371 towns and villages in West Sussex where we cook. Our nearest city page is Brighton, about 6 miles away.

School fairs, for a school like Buckingham Park Primary School, are a natural fit for a paella stall. For a church fête or fundraiser, at a church such as St Mary de Haura Church, a paella stall adds a hot meal to the cakes and tombola. The coast is within about a mile of Shoreham-by-Sea, so for seaside events we plan a sheltered pitch, and seafood paella sells well by the sea.

We cook at events all over the BN43, BN15 and BN42 postcode area and the streets around it. Local streets include Adelaide Square, High Street and Rainbow Square; an event at home on any of them works well with live paella. Shoreham-by-Sea is on the A27 and A259, which makes it straightforward to bring the equipment. We also cook at events in Old Shoreham (1 mile west), Kingston by Sea (1 mile east), Adur (1 mile north-west), Southwick (2 miles east) and Portslade (2 miles east). Larger places within reach include Worthing (6 miles west), Haywards Heath (14 miles north-east), Burgess Hill (10 miles north-east), Littlehampton (12 miles west), Rustington (11 miles west) and Storrington (10 miles north-west).

Other landmarks nearby include Southlands Hospital (0.6 miles north-east). Green spaces nearby include Thundersbarrow Hill and Shoreham Beach.

  • Schools near Shoreham-by-Sea include Shoreham College (1 mile east) and Shoreham Academy (1.1 miles east)
  • Nearby, you’ll find The Crabtree pub (within half a mile south-west)

Questions from Shoreham-by-Sea

Can you cook near the sea around Shoreham-by-Sea?

Yes, with a sheltered cooking spot. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

How far is Shoreham-by-Sea from London?

About 46 miles from central London, and well within our area.

How many paellas should we have?

Two or three covers most guests. We will recommend a mix based on diets.

Can you cook indoors?

Indoors only where ventilation and the venue allow it. Courtyards, doorways and terraces often work.

Do you cater for coeliacs?

Yes, on request. Rice is naturally gluten-free, but stock and some ingredients may not be, so we cook a gluten-free paella separately.

How quickly can you serve?

It’s one of the quickest hot foods to serve, which suits busy periods.

Is halal food available?

We can. Tell us how many guests need halal food, and it is cooked separately.

How long does the paella take?

We arrive well before serving to set up and start the stock. The rice itself takes about 20 minutes, timed around your event.

Diets, allergies and planning

Nearly every event has some special diets. To plan for them:

  • Send traders one clear trader pack
  • Ask traders about packaging and waste
  • Check how many portions traders can serve
  • Schedule crew meals

If crew or volunteer meals are booked, they’re served at the agreed times.

Tapas and churros can be added to a stall menu.
