Cook it yourself or book a caterer?

You can hire equipment and do it yourself, but there is shopping, prep and hours of cooking. We take care of all of it.

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

How it works

We arrive in good time before you want to eat, set up the cooking area and get the stock going. Guests generally gather round to watch as the paella takes shape. After-work summer parties in Trolliloes have daylight until about 9:15pm in late June and 7:00pm in late September; for winter events, dark by about 3:55pm, we need lighting.

  1. Send us the date, venue, numbers, timings and diets.
  2. We send a menu, a price and the paperwork for your venue.
  3. We arrange access and timings with your facilities team or venue.
  4. We cook live on the day and serve on schedule.
  5. Afterwards, our area is cleared and left clean.

For event organisers in Trolliloes

Events in public spaces, like parks, normally need permission. We can send whatever the landowner or council needs from us.

If you’re booking for a business, tell us how you’d like to handle the booking and payment, and we will explain how it works. We can work with your facilities team on access and timings.

What we need at the venue

We’ll be honest if a space won’t work. The main points are:

  • Somewhere close to park and unload
  • Clearance from fences, hedges, branches and anything flammable
  • Sign-off from facilities for live cooking

If in doubt, send us a picture of the spot and we will advise before booking.

Trolliloes for staff parties and team days

Trolliloes is about 4 miles north-east of Hailsham, in East Sussex. Whether your work event is in the middle of Trolliloes or on the outskirts, we offer the same service: live cooking, separate pans for every diet and a clear price. Trolliloes is one of 289 places in East Sussex we cover. We cook right across the region, from Trolliloes to Brighton (20 miles away).

Nearby historic houses include Horselunges Manor (3.7 miles south-west). Estates and historic houses can make memorable settings for client events, but they normally set strict rules for caterers. With the High Weald National Landscape within about 7 miles, rural team days are easy to arrange.

We cater work events across the BN27 postcode area and the streets around it. From Trolliloes Lane and New Road or anywhere nearby, we can cook there. If your venue is just outside Trolliloes, we also cover Bodle Street Green (1 mile east), Rushlake Green (2 miles north), Brownbread Street (3 miles east), Dallington (3 miles north-east) and The Pound (3 miles east). We also cook in nearby towns such as Eastbourne (9 miles south), Hastings (11 miles east), Bexhill-on-Sea (8 miles south-east), Seaford (13 miles south-west), Lewes (14 miles west) and Hailsham (4 miles south-west).

A little further out are Sussex Farm Museum (3.7 miles north-west) and Old Castle (2.8 miles north-east).

Trolliloes: your questions answered

Do you cater in the High Weald National Landscape?

Yes. Some venues there have rules about vehicles, ground and cooking, so check with yours. We will follow the site rules.

Is Trolliloes close to London?

Roughly 44 miles from the centre of London.

Can you do gluten-free paella?

We can cook a gluten-free paella in its own pan. Tell us about any coeliac guests when you book so we can plan it carefully.

How long do you need on site?

It depends on the menu and numbers. We will agree arrival, cooking and serving times with you.

Do you provide plates and cutlery?

If you need them, yes. Crockery, cutlery and napkins, or good-quality disposables are available.

What documents can you provide?

Let us know what’s required, and we’ll provide it.

Can you cater a winter event?

With the right covered space, yes. Hot paella in winter is popular.

Can you cook indoors?

Mostly outside or under an open cover, since the burners are gas. We will check whether your venue has a suitable space.

Catering for every guest

A little planning makes sure everyone can eat. Here’s how:

  • Add a diet question to the sign-up form
  • Ask facilities what documents they need from us
  • Provide shade and seats outdoors
  • Ensure there are plenty of soft drinks

Staff can serve canapés or bowl food during a reception.

Canapé tapas for receptions and launches.

Prices and what affects them

There are no hidden charges: the quote reflects:

  • Travel, parking and access
  • Whether you need crockery
  • Extra courses such as canapés, tapas and dessert
  • How many guests are eating

Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you can choose exactly what you need.

What to tell us

Here’s what makes a quick, accurate quote possible:

  • A picture of the space, if you can
  • Expected numbers
  • Where the event is
  • Which courses you have in mind

Still deciding on the menu? That is fine: tell us about the occasion and the guests, and we’ll suggest a menu. To start, use our quote form.
