Before you choose a spot

No two venues are the same, so we ask about the space before we confirm. In general, we need:

  • Flat, firm ground for the cooking area
  • Clearance from fences, hedges, branches and anything flammable
  • Agreement from the venue or landowner to cook on site

Not sure about your space? Send us a photo and we will tell you honestly before you book.

Can I cook paella for a crowd myself?

Cooking it yourself? Test your pan and burner first, keep the stock hot, and leave the rice alone once it is in. And keep children and pets well away from the burner.

For a small group, cooking yourself can work well. For big numbers or lots of diets, a caterer makes life easier, and handles separate pans for each diet.

Step by step

Here’s how the day generally runs: we set up the pans and start the sofrito, the rice cooks in front of your guests, and it is served hot from the pan at the agreed time. In Thame, a summer staff party stays light until about 9:25pm; winter events, dark by about 3:55pm, need lit cooking and serving areas.

  1. First, we check date and venue.
  2. You choose paellas, canapés and extras.
  3. We provide the paperwork.
  4. The paella cooks as your team gathers.
  5. Fast service, then we clear away.

Getting ready for the day

  • Keep the cooking spot clear of fences, hedges and branches
  • Confirm numbers and diets before the day
  • Check the venue allows live cooking
