DIY paella versus live catering
You can hire equipment and do it yourself, but there is shopping, prep and hours of cooking. A caterer handles all of that.
You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.
What’s in the pans
Canapé tapas
Small bites carried round on boards while guests mingle, ideal for the drinks reception.
Paella wedding breakfast
Paellas for every guest, served straight from the pan.
Questions from Penhurst
Which station should guests use for Penhurst?
The closest is Battle station, roughly 3.8 miles away.
Can you cook at venues in the High Weald National Landscape?
Yes, though some venues in protected landscapes have extra rules; ask your venue. We’ll follow the site rules.
How soon do we need to book?
The sooner the better. Peak dates go quickly, so it pays to ask early.
Do you cook inside?
Mostly outside or under an open cover, because we use gas burners. We’ll check whether your venue has a suitable space.
Can you cook in the rain?
We cook under cover, like a gazebo or open-sided marquee. We will agree a wet-weather plan with you.
How much paella per person?
Quantities depend on numbers, timing and courses, with a little extra built in. Accurate numbers help.
Can you cook halal paella?
We can. Let us know your halal numbers, and we’ll cook a separate pan.
How much is live paella catering?
Every event is quoted individually, so you only pay for what you need. Give us your date, numbers and menu ideas and we will reply with a price.
Prices and what affects them
There are no hidden charges: the quote reflects:
- Crockery and cutlery, or disposables
- How many guests are eating
- The paellas you choose
- Parking and unloading
Cost depends on guest numbers, the menu and the courses, plus any staff, crockery and travel. Every event gets its own quote.
What we need to know
You do not need every detail fixed to get a quote, but it helps to know:
- Whether the venue has crockery or staff
- The venue or postcode
- Which courses you have in mind
- A photo of the space, if you can
It’s easy to get a price: tell us the date, place, numbers and any dietary needs. We’ll send a clear, itemised quote and a suggested menu.
Dietary needs and planning tips
With a little notice, every diet is easy. Our advice:
- Add a dietary question to your RSVP cards
- Confirm the venue’s catering rules early
- Let us know about meals for your band or photographer
- Send us the running order and speech times
We keep in touch with your venue coordinator or toastmaster on the day, so you can enjoy yourselves.
Table tapas make a sociable starter.
How the day works
When we arrive, we set up our cooking area, light the burners and start the sofrito. The rice goes in about 20 minutes before serving, so the timing is planned around your event. In Penhurst, midsummer sunset is about 9:15pm, and by late September it is nearer 7:00pm, so an evening paella for evening guests is usually served in daylight in high summer. Later in the year, plan lighting: in December it’s dark by about 3:55pm.
- Share your date, venue, numbers and plans for the day.
- Together we plan each course and confirm the price.
- Timings are agreed with you and the venue, around speeches and photos.
- We cook live on the day and serve every course on cue.
- We clear our cooking area, and staff stay as agreed.
Before we arrive
- Pick a flat, firm spot for us to cook
- Confirm numbers and diets before the day
- Check the venue allows live cooking
