How the day works

Serving is fast: we serve straight from the pan, so even a long queue moves. When service is finished, we pack down. At midsummer, it’s light in Shalstone until about 9:30pm, perfect for canapés outdoors. By late September it is dark around 7:10pm, and in December by about 3:55pm.

  1. Tell us the date, venue and numbers.
  2. We suggest a selection and a quote.
  3. We set up and finish the hot dishes.
  4. Canapés go round or tapas go to the tables.
  5. We pack down when service ends.

Before we arrive

  • Give us your final numbers and diets
  • Choose a level spot for the cooking area
  • Keep the cooking spot clear of fences, hedges and branches

Space, weather and the venue

We will be honest if a space won’t work, and suggest an alternative. The main points are:

  • Venue approval for outside catering
  • Table space for sharing dishes at seated meals
  • Space for a serving table or station

If you’re unsure, send a picture of the space and we’ll say what we think before you book.

Paella compared with other options

A plated starter needs a kitchen and staff. Table tapas are shared and relaxed. There is no one-size-fits-all price for live paella. A simple paella lunch costs less than a wedding with canapés, three paellas and waiting staff. Your quote spells it all out.

Questions from Shalstone

We’re having a ceremony at Church of St Edward: can you cater afterwards?

Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Live cooking usually happens at the reception venue, not the church. Tell us where the reception will be.

Is Shalstone too small for live paella?

No, we cook in small places too. Let us know about access and parking.

What happens if it rains?

We cook under cover, such as a gazebo, marquee or open-sided barn with good ventilation. We plan for rain with you in advance.

Should we have more than one paella?

Normally two or three, so every guest has a choice. We’ll recommend a mix based on diets.

Can we have tapas without paella?

Absolutely, for receptions, parties and evening food.

Are your tapas vegetarian-friendly?

Plenty are vegetarian, like tortilla and padrón peppers. We label each dish.

How much space do you need?

A level space for the pans, burners and a serving table, outdoors or in a marquee or well-ventilated area, plus the venue’s agreement to cooking.

Do you cater for young children?

Children are welcome. Tell us how many and roughly how old, and we’ll plan a pan with them in mind.

If you have a budget in mind, tell us, and we will suggest a menu to match. Even a simple menu can be a feast.
