Cook it yourself or book a caterer?

Hiring a pan and burner is one option, but there’s shopping, prep and hours of cooking. A caterer handles all of that.

DIY catering keeps costs down, but the host spends the party cooking. Booking us means you get the show without the stress.

Dietary needs and planning tips

Dietary needs are easy to plan for with a little notice. Our advice:

  • Make sure dishes are labelled
  • Decide whether tapas are a starter, canapés or the whole meal
  • Widen the selection for a tapas-only menu
  • Label seafood clearly

Canapés circulate with drinks.

Staff to serve canapés.

Why live cooking beats a buffet

Tapas can be a starter, a reception or the whole meal, which makes them easy to plan around. Got a budget? Let us know, and we’ll suggest a menu to match. A simple menu can still feel generous.

Why book with us

Questions from Knave's Ash

What about events near the coast?

Yes, as long as we can shelter from the wind. Wind is the main issue on the coast, so we plan shelter.

Which station should guests use for Knave's Ash?

Herne Bay station, about 2.6 miles north-west of the centre.

Do you cook tapas on site?

We finish hot dishes on site; cold tapas are laid out as guests arrive.

Do you do vegan paella?

Yes. We cook vegetarian and vegan paellas in their own pans, alongside the meat and seafood pans.

Is tapas catering available separately?

Yes. Tapas and canapés can be booked on their own.

Can you bring crockery?

We can. Tell us what your venue provides and we will include the rest in the quote.

What happens if it rains?

Rain does not stop us, as long as there’s a ventilated cover. We will make a plan B with you.

Can you do sangria?

Sangria, yes, plus bar staff for your own drinks.

The process

The cooking is part of the entertainment. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook. At midsummer, it’s light in Knave's Ash until about 9:15pm, perfect for canapés outdoors. By late September it’s dark around 7:00pm, and in December by about 3:50pm.

  1. Send us the date, venue, numbers and serving style.
  2. We put together a tapas selection and a quote.
  3. We arrive, set up and finish hot dishes on site.
  4. We serve canapés with drinks or set table tapas down to share.
  5. We pack down when service ends.

How to prepare

  • Share the running order, including any speeches
  • Send us final numbers and dietary needs in good time
