How it works

The paella is cooked in giant, shallow pans over gas burners. We need a level, ventilated spot, and we agree where that is before the day. At midsummer, it’s light in Wintershill until about 9:25pm, so a garden party can run well into the evening. In late September it’s dark by about 7:10pm; add lights for the evening.

  1. First, we check the date and the space.
  2. You choose your paellas and any extras.
  3. We set up the burners and start the sofrito.
  4. The rice goes in and your guests gather round.
  5. It is served hot, and we clear away afterwards.

Getting ready for the day

  • Have a gazebo or cover ready if rain is likely
  • Have a level space ready for the pans
  • Let us know who to talk to on the day
