Why live cooking beats a buffet

A hog roast is great for meat lovers, but harder for vegetarians and vegans. Paella covers everyone with separate pans. If you have a budget in mind, tell us, and we’ll put together a menu that fits. A simple menu can still feel generous.

Why Peasmarsh hosts choose us

  • Real theatre, not just catering
  • Every diet catered for, pan by pan
  • Catering across East Sussex, including Peasmarsh
  • Add tapas, canapés and Spanish desserts

Common questions in Peasmarsh

We’re having a ceremony at The Parish Church of St Peter and St Paul: can you cater afterwards?

Yes, at a garden, marquee or venue nearby with a suitable spot to cook. Live cooking normally happens at the reception venue, not the church. Tell us where the reception will be.

Do you come out to small places like Peasmarsh?

No, we cook in small places too. Let us know about access and parking.

Will the neighbours notice?

Less smoke than a barbecue, more smell, and it’s a good smell. A friendly note to the neighbours helps.

Do you offer halal options?

Yes. We use halal chicken and leave out pork and alcohol, in a separate pan.

How much is live paella catering?

We quote for each event, so you only pay for what you need. Give us your date, numbers and menu ideas for a clear quote.

Do you cook at halls and clubs?

Yes, if there is a suitable outdoor or ventilated spot to cook. Check the venue allows live cooking.

Do you cater in Peasmarsh?

Yes. We cover London and the South East, and Peasmarsh is within our area and the rest of East Sussex. For a quote, send us your details through our quote form.

How long does the paella take?

It depends on the menu and numbers. We’ll agree arrival, cooking and serving times with you so the paella is ready when you want it.

Can I cook paella for a crowd myself?

Cooking paella for a crowd yourself is possible, but it is harder than it looks. Large pans need the right burners, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.

You can hire equipment and do it yourself, but you will still need to source ingredients, prep and cook for hours. We take care of all of it.

What we need at the venue

We’ll be honest if a space won’t work. What matters most:

  • Flat, firm ground for the cooking area
  • Somewhere close to park and unload
  • A photo of the garden helps us check the space

If in doubt, send us a picture of the spot and we’ll advise before you book.

Popular choices

  • Mixed paella
  • Chicken & chorizo paella
  • Vegetable paella
  • Churros

Step by step

We get there well before serving, unload, set up the burners and prepare the stock. Guests usually gather round to watch as the paella takes shape. A summer party in Peasmarsh stays light until about 9:15pm at midsummer, which gives a garden party a long evening. In late September it is dark by about 7:00pm; add lights for the evening.

  1. First, we check the date and the space.
  2. You choose your paellas and any extras.
  3. The burners go on and the sofrito starts.
  4. In goes the rice, and guests gather.
  5. It is served hot, and we clear away afterwards.

How to prepare

  • Arrange parking near the cooking spot
  • Leave space around the cooking area
  • Name one person we can ask on the day
