How the day works

We take care of the food from set-up to service, so you can enjoy your party. If you’ve chosen tapas or canapés, they go out first as the rice is cooking. Sunset in Maplehurst is about 8:50pm in late May and 9:20pm in late June. If the party runs past dark, we will need light where we cook and serve.

  1. First, we check the date and the space.
  2. You choose your paellas and any extras.
  3. The burners go on and the sofrito starts.
  4. In goes the rice, and guests gather.
  5. It is served hot, and we clear away afterwards.

Before we arrive

  • Pick a flat, firm spot for us to cook
  • Share the running order, including any speeches
  • Name one person we can ask on the day

Should I cook it myself?

Plenty of people try cooking paella for their own party. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.

You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.
