Do you offer halal options?

Yes, on request. Let us know your halal numbers, and we will cook a separate pan.

What if the weather’s bad?

We cook under cover, such as a gazebo, marquee or open-sided barn with good ventilation. We’ll agree a wet-weather plan with you.

Live paella or other catering?

Barbecues cook in batches, so food comes off in waves. Paella is ready all at once, so everyone eats together. Live paella often compares well with a sit-down meal, as there’s no kitchen to hire and fewer staff to pay. Ask us for a quote.

Why us?

  • Live cooking, not reheated food
  • Food that becomes part of the entertainment
  • A quote that spells everything out

The process

We work to your timings. If speeches run late or the photos take longer, we adjust the cooking so it is still served fresh. Around midsummer it stays light in Walderslade until about 9:20pm; by late September sunset is nearer 7:00pm, so summer evening events are usually served in daylight. In December it is dark by about 3:50pm, so winter events need lighting where we cook.

  1. It starts with your date, venue, numbers and any dietary needs.
  2. We put together a menu and a clear quote.
  3. We arrive early, set up the cooking area and start the stock.
  4. The paella cooks in front of your guests, with tapas first if you’ve chosen them.
  5. We serve it hot from the pan and clear our area when service ends.

Before we arrive

  • Keep the cooking spot clear of fences, hedges and branches
  • Give us a contact for the day
  • Confirm numbers and diets before the day

Cook it yourself or book a caterer?

You can hire equipment and do it yourself, but you’ll still need to source ingredients, prep and cook for hours. We take care of all of it.

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather enjoy the party, let us cook.

A closer look at the menu

Vegetable and vegan paella

A vegetable paella is not an afterthought: peppers, artichokes and beans with saffron.

Mixed paella

A mix of chicken and seafood, and a popular all-rounder.

Diets, allergies and planning

A little planning makes sure everyone can eat. Try these:

  • Choose two or three paellas so every guest has a choice
  • Let us know if anyone has coeliac disease
  • Let us know about other food at the event
  • Tell us how many children are coming

Paella is best eaten as soon as it is ready, so we serve when guests are ready.

Spanish desserts such as churros or crema catalana finish the meal, or serve your own cake.

  • Cooked live in giant pans at your event
  • Vegetarian, vegan, gluten-free and halal options
  • Paella, tapas, canapés and desserts
  • Sangria, bar staff, crockery and waiting staff
