Portswood questions
What about events near the coast?
Yes, with a sheltered cooking spot. Sea breezes cool the pan, so a windbreak, building or gazebo helps.
Can you cook in Southampton Common?
Only if the landowner, generally the council, allows it. Check with them, and we’ll provide our paperwork.
Where do you cater?
London and the South East: Kent, Surrey, East and West Sussex, Hampshire, Berkshire, Bucks, Oxfordshire and the Isle of Wight, including Portswood.
What space do you need to cook?
A level space for the pans, burners and a serving table, outdoors or in a marquee or well-ventilated area, plus the venue’s agreement to cooking.
Which paellas suit our guests?
Most events choose two or three: chicken or mixed, seafood, and vegetable or vegan. Our menu lists the options.
Can you provide dessert?
Yes. Spanish desserts such as churros or crema catalana.
Do you have a kids’ option?
Children are welcome. Let us know numbers and ages, and we will plan for them.
Do you cater in Portswood?
We do. Portswood is one of the places we cover. Tell us your date and we’ll check availability.

The process
When we arrive, we set up our cooking area, light the burners and start the sofrito. The rice goes in about 20 minutes before serving, so the timing is planned around your event. Evenings in Portswood stay light until about 9:25pm in June, but by late September sunset is around 7:10pm; once it’s dark, we need light to cook and serve by.
- Contact us with the basics: when, where and how many.
- We come back with paellas to suit your guests, plus any extras.
- A week or so before, we confirm the plan.
- On the day we cook live, timed around your event.
- Guests are served from the pan, and our area is cleared afterwards.

The menu, dish by dish
Vegetable and vegan paella
A slow sofrito, seasonal vegetables and a good vegetable stock make a proper main dish. Vegan versions use plant-based stock.
Paella Valenciana
In Valencia, the recipe is fiercely debated. The traditional pan has chicken, flat green beans and butter beans, and it is a crowd-pleaser.
