Paella Valenciana
The original paella from Valencia is a countryside dish of chicken and vegetables, not seafood. It’s a favourite with guests who do not eat fish.
What affects the price in Middle Stoke
Here’s what makes the biggest difference to the price:
- Chicken, vegetable or premium seafood

- How long we are needed on site
Access and travel can make a difference to the cost, so it helps to tell us about your venue. Everything is confirmed in writing.
What to tell us
To check availability and price, we need:
- A picture of where we’d cook
- Anything your venue supplies
- Which courses you have in mind
- Expected numbers
It is easy to get a price: tell us the date, place, numbers and any dietary needs. We’ll come back with a clear quote and a suggested menu.
Can I cook paella for a crowd myself?
You can cook paella for a crowd yourself, but it takes practice. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.
Weighing up DIY against a caterer? Think about numbers, diets and how much you want to enjoy the day. We are happy to give you a quote to compare.
Organising for someone else?
Hosting a party at home? Send us a photo of the garden and tell us about access, and we’ll let you know if live paella is a good fit.
For larger events, we plan the number of pans and serving points around your timings, so everyone eats promptly. Let us know how long the food break is.
Dietary needs and planning tips
With a little notice, every diet is easy. We suggest:
- Tell us about coeliac guests specifically
- Put allergy details in writing
- Ask for labels on each pan
- Mention any other courses or food
A short rest after cooking helps, which is when we normally call guests over.
Crockery, cutlery and waiting staff are available if your venue does not provide them.
Why live cooking beats a buffet
Food trucks and street-food vans serve one portion at a time. A paella pan serves many portions quickly, so everyone can eat at the same time. When you compare quotes, check what each one includes: staff, crockery, sides, travel and VAT. We itemise ours.
Why us?
- Food that becomes part of the entertainment
- Hot food served quickly from the pan
- Waiting staff and crockery on request
- Every diet catered for, pan by pan

The process
Here’s how the day generally runs: we arrive, set up and start cooking, your guests watch the rice cook, and it is served hot from the pan when you’re ready to eat. Evenings in Middle Stoke stay light until about 9:20pm in June, but by late September sunset is around 7:00pm; once it is dark, we need light to cook and serve by.
- You share your date, numbers and venue.
- We plan the menu with you, including every diet.
- We arrive early to set up the burners and pans.
- The sofrito, stock and rice go in, and guests gather to watch.
- We serve hot from the pan and clear our cooking area.
