How our paella catering works in Glyndebourne

A couple of different pans covers everyone: a meat or mixed paella, a seafood paella and a vegetable or vegan one. Every pan is cooked on its own, so diets are easy to manage. Popular choices include chicken and chorizo paella, black rice and seafood paella, and we’re often booked for milestone birthday parties and family celebrations and christenings.

In a rural place like Glyndebourne, the setting does a lot of the work: a paella cooking in a garden or field feels right at home. Let us know about access and ground conditions. All the cooking equipment comes with us, and we clear our cooking area away afterwards.

Diets, allergies and planning

Few dishes handle mixed diets as well as paella, because every paella has its own pan. A few tips:

  • Have seats for most of your guests
  • Confirm allergies by email
  • Pick a mix of paellas to cover every diet
  • Let us know about other food at the event

Any staff you book serve and clear, so you can enjoy your guests.

Add canapé tapas with the drinks or table tapas as a starter while the paella cooks.

What’s in the pans

Black rice

Black rice gets its colour from squid ink, traditionally with alioli. It makes a dramatic second seafood pan.

Paella Valenciana

The original paella from Valencia is a countryside dish of chicken and vegetables, rather than seafood. It is often the most popular pan at an event.

How the day works

Serving is fast: the paella goes straight from the pan to the plate, so even a long queue moves. Afterwards we clear our cooking area away. Around midsummer it stays light in Glyndebourne until about 9:15pm; by late September sunset is nearer 7:05pm, so summer evening events are generally served in daylight. In December it is dark by about 3:55pm, so winter events need lighting where we cook.

  1. It starts with your date, venue, numbers and any dietary needs.
  2. You get a suggested menu and an itemised quote.
  3. On the day we arrive in good time, set up and start the stock.
  4. The paella cooks in front of your guests, with tapas first if you’ve chosen them.
  5. It’s served straight from the pan, and we pack down afterwards.

Before we arrive

  • Name one person we can ask on the day
  • Arrange a covered spot for wet weather
  • Tell us when you want to eat

  • Clearance from fences, hedges, branches and anything flammable
  • Agreement from the venue or landowner to cook on site
  • Open air or a well-ventilated covered spot

If in doubt, send us a picture of the spot and we’ll advise.

Your questions about paella catering in Glyndebourne

We’re having a ceremony at St Mary's Church: can you cater afterwards?

Yes, at a nearby garden, marquee or hall where we can cook. Churches rarely have space for live cooking, so the meal is typically elsewhere. Send us the reception address.

Which station should guests use for Glyndebourne?

Glynde station, about 1.2 miles south of the centre.

Can you supply plates?

Yes, on request. Proper crockery or quality disposables are available.

How do you work out quantities?

Pans are sized to your numbers and other courses. Let us know about any other food. Our guide to portions explains more.

Which paella is most popular?

That depends on who’s coming. Chicken and mixed paellas tend to go first, with seafood and vegetable pans alongside.

Is the paella gluten-free?

We can, if you tell us in advance. The rice is gluten-free, but stocks and chorizo can contain gluten, so we make a separate gluten-free pan.

Does paella work for big events?

Yes. Large pans and fast service from the pan make it well suited to crowds.

What does paella catering cost?

Every event is quoted individually, based on what you actually want. Tell us your date and numbers for a clear quote.

What paella catering costs

There is nothing hidden: the price is based on:

  • Distance and access to the venue
  • How many courses
  • Guest numbers
  • Chicken, vegetable or premium seafood

Travel, parking and access can affect the price, so it helps to tell us about your venue. Everything is confirmed in writing.

Details that help

You don’t need everything decided to ask for a quote, but it helps to know:

  • Diets and allergies you know about
  • A picture of where we’d cook
  • Whether the venue has crockery or staff
  • The date and time of the event

A detailed enquiry gets a more accurate quote: venue, timings, courses and extras. To send your details, send us your details through our quote form.

Live paella or other catering?

Plated meals need a kitchen and a bigger team. Live paella needs a level, ventilated spot and the venue’s permission to cook, and it is entertaining too. Live paella pricing depends on the event. A garden party lunch and a full wedding menu are very different jobs. We itemise everything in your quote.
