How it works
When we arrive, we set up the burners and pans and start cooking the sofrito and stock. The rice goes in about 20 minutes before serving, so we time everything to your schedule. Summer events in World's End have daylight until about 9:20pm at midsummer and about 7:05pm by late September, so evening trading normally finishes in daylight in high summer. For winter markets, dark by about 3:55pm, the pitch needs lighting.
- Organisers send us the event details, dates and pitch information.
- You get our menu, pitch requirements and paperwork.
- We set up at the agreed time.
- We cook in front of the crowd and serve from the pan all event.
- At the end, we clear our pitch.
Before we arrive
- Keep the cooking spot clear of fences, hedges and branches
- Give us a contact for the day
- Give us your final numbers and diets

Planning help
Cook it yourself or book a caterer?
Cooking paella for a crowd yourself is possible, but it is harder than it looks. A big pan needs a burner that heats it evenly, and getting the rice right at scale is tricky. Our guide to cooking paella for a crowd explains how.
Some hosts like to cook themselves. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather be with your guests, we will do the cooking.
