Cook it yourself or book a caterer?

Some hosts like to cook themselves. The usual problems are a pan too big for the burner, too much rice and stirring once the rice is in. If you’d rather be with your guests, we’ll do the cooking.

You can cook paella for a crowd yourself, but it takes practice. Large pans need the right burners, and getting the rice right at scale is tricky. Read how to cook paella for a crowd.

Common questions in Upton

Is Upton too small for live paella?

Not at all. We cater in villages and hamlets as well as towns. Tell us about lanes, gates and parking.

Can you cook near the sea around Upton?

Yes, as long as we can shelter from the wind. Sea breezes cool the pan, so a windbreak, building or gazebo helps.

Do you offer halal options?

Yes, on request. Let us know your halal numbers, and it is cooked separately.

Can you feed our volunteers?

We can. We can cook for crew, volunteers or a hospitality area as well as, or instead of, a public stall.

Do you do vegan paella?

Yes, and meat eaters frequently go back for seconds. Each is cooked separately, with its own stock and utensils.

Where do you cater?

We cater across London and the South East, including the Isle of Wight. Find your area.

How far ahead should we book?

As soon as you have a date. Peak dates go quickly, so contact us early.

How many different paellas?

Two or three is usual: meat or mixed, seafood, and vegetable or vegan. We will help you decide the split.

Live paella or other catering?

Burger and hot dog stalls are familiar but similar. Paella adds something different in a food line-up. Extras such as tapas, desserts, sangria, staff and crockery are priced separately, so you only pay for what you want.

Planners, venues and businesses

Hosting a party at home? Send a picture of the space and tell us about parking, and we will let you know if live paella is a good fit.

For larger events, we plan the number of pans and serving points around your timings, so guests are fed quickly. Tell us how long you have for food.

The process

Watching it cook is half the fun. We start with the sofrito, add the stock and saffron, then spread the rice across the pan and leave it alone to cook. At midsummer, events in Upton stay light until about 9:20pm, so evening trading generally finishes in daylight in high summer. Winter markets, dark by about 4:00pm, need a well-lit pitch.

  1. Send the event name, expected visitors and pitch size.
  2. You get our stall menu and what we need on site.
  3. Paperwork goes over in good time.
  4. On the day, the pans are on before the busiest hours.
  5. When trading ends, the pitch is cleared and left clean.

Diets, allergies and planning

Few dishes handle mixed diets as well as paella, because each paella is cooked in its own pan. A few tips:

  • Check allergen info is on display
  • Check how many portions traders can serve
  • Ensure the line-up includes vegan and gluten-free options
  • Give traders a single information pack

If crew or volunteer meals are booked, they’re served at the agreed times.
