How it works

On the day, we set up the burners and pans and start cooking the sofrito and stock. The rice goes in about 20 minutes before serving, so we time everything to your schedule. At midsummer, events in The Hyde stay light until about 9:20pm, so evening trading usually finishes in daylight in high summer. For winter markets, dark by about 3:55pm, the pitch needs lighting.

  1. Send the event name, expected visitors and pitch size.
  2. We reply with our menu, prices for visitors and requirements.
  3. We send the documents the event asks for.
  4. We time the first pans for the lunchtime rush.
  5. When trading ends, the pitch is cleared and left clean.

Dietary needs and planning tips

Good planning keeps every guest safe and happy. Here’s how:

  • Put all trader information in one pack
  • Ask traders about serving speed at peak times
  • Agree waste arrangements with traders
  • Make sure the line-up includes vegan and gluten-free options

We set up at the agreed time.

Tapas and churros can be added to a stall menu.

Can I cook paella for a crowd myself?

Hiring a pan and burner is one option, but there’s shopping, prep and hours of cooking. A caterer handles all of that.

Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather enjoy the party, let us cook.

Space, weather and the venue

Most outdoor spaces and many venues work for live paella, but there are a few things to check:

  • Your arrangements for power, water and waste
  • Access for unloading at set-up
  • A pitch big enough for the pans, burners and serving table

As a London location, The Hyde is inside the Ultra Low Emission Zone, and parking takes planning: let us know about permits, bays or off-street parking.
