Dietary needs and planning tips

Few dishes handle mixed diets as well as paella, because every paella has its own pan. Here are a few tips for planning:

  • Ask for allergen information at each stall
  • Ensure the line-up includes vegan and gluten-free options
  • Ask traders about packaging and waste
  • Give traders a single information pack

Our pitch is kept tidy and safe.

Festival paella catering in Spitalfields, cooked live

Big batches mean lunchtime rushes are easy. Each portion takes seconds to serve. Whether it is food and music festivals and farmers’ and Christmas markets, we’ll put together a menu of vegan paella, giant-pan paella and seafood paella and more.

Street parties and school fairs in Spitalfields are a great fit for a paella stall, as long as the road closure or site permission is in place. We cook every pan in full view of your guests, so it arrives hot and becomes part of the event.

Spitalfields events: pitches and permissions

Spitalfields is about 1 mile north-east of London, in Greater London. Wherever your event is in the E1 area, we can cook for your guests. We cover all 764 towns and villages in Greater London.

If your event is in Finsbury Circus, the organiser will need the landowner’s permission; we’ll supply our paperwork. For visitors coming by rail, Spitalfields has its own station, London Liverpool Street station.

Festival paella catering in E1, EC2A and E1W is planned around your venue and timings. Streets in the area include New Road, Mark Lane and Bell Lane, and we can cook for an event on any of them. You will find Spitalfields on the A10 and A1202, which makes it straightforward to bring the equipment. What affects the price in Spitalfields

Two events with the same number of guests can cost different amounts, because of:

  • How long we’re needed on site
  • The number of people
  • Waiting and bar staff
  • How many courses

Seafood and premium ingredients cost more than chicken or vegetable paellas, so the menu you choose affects the price. Tell us your budget and we’ll suggest a menu.

Details that help

You don’t need every detail fixed to get a quote, but these help:

  • What the venue already provides
  • The address or venue name
  • Whether you want canapés, tapas or desserts
  • A photo of the cooking space, if it’s a garden or field

Most quotes start with a few simple details: date, location, guest numbers and diets. You can fill in our quote form.

Planning the cooking area

Every venue is different, so we ask about the space before we confirm. In general, we need:

  • Your trader pack and site rules
  • Clearance from tents and gazebos
  • Firm, level ground

As a London location, Spitalfields is inside the Ultra Low Emission Zone, and parking takes planning: tell us about parking bays, permits or a driveway.

If you’re unsure, send a picture of the space and we’ll say what we think.

Popular choices

  • Giant paella pans
  • Churros

Should I cook it myself?

Doing it yourself saves money, but the host ends up stuck at the stove. Booking us means you get the show without the stress.

Weighing up DIY against a caterer? Consider your numbers, your guests’ diets and your own time. We are happy to give you a quote to compare.

Step by step

When we arrive, we set up the burners and pans and start cooking the sofrito and stock. Once the rice goes in, it takes about 20 minutes, so the timing is planned around your event. Summer events in Spitalfields have daylight until about 9:20pm at midsummer and about 7:05pm by late September, which helps evening trading. For winter markets, dark by about 3:55pm, the pitch needs lighting.

  1. We check your dates.
  2. We agree menu and pitch.
  3. Burners and pans go up.
  4. The first pans are ready as visitors arrive.
  5. We serve, then clear the pitch at the end.

Getting ready for the day

  • Ensure the spot is clear of anything flammable
  • Tell us where to park and unload
  • Share the running order, including any speeches
