How the day works

A typical event goes like this: we set up the pans and start the sofrito, your guests watch the rice cook, and it is served hot from the pan when you are ready to eat. At midsummer, events in Nettlebed stay light until about 9:25pm, so evening trading generally finishes in daylight in high summer. For winter markets, dark by about 3:55pm, the pitch needs lighting.

  1. You send us the event, dates and pitch details.
  2. You get our menu, pitch requirements and paperwork.
  3. We set up at the agreed time.
  4. We cook in front of the crowd and serve from the pan all event.
  5. At the end, we clear our pitch.

Before we arrive

  • Confirm numbers and diets before the day
  • Ensure the spot is clear of anything flammable
  • Get the venue’s permission for cooking
