What happens on the day

When we arrive, we set up the burners and pans and start cooking the sofrito and stock. Once the rice goes in, it takes about 20 minutes, so we time everything to your schedule. Summer events in Mystole have daylight until about 9:15pm at midsummer and about 7:00pm by late September, which helps evening trading. For winter markets, dark by about 3:50pm, the pitch needs lighting.

  1. First, we check the dates.
  2. We agree what we’ll serve and where.
  3. We set up our burners and pans.
  4. The first pans are ready as visitors arrive.
  5. We serve, then pack down.

What we need at the venue

We cook in large pans over gas burners, so the cooking area needs a little planning. Here’s what we look for:

  • A pitch big enough for the pans, burners and serving table
  • Spacing from tents and other structures
  • A level pitch on firm ground

If you are unsure, send a photo of the space and we’ll say what we think before booking.

Choosing a paella caterer

Can I cook paella for a crowd myself?

Not sure whether to cook yourself or book a caterer? Consider your numbers, your guests’ diets and your own time. Ask us for a quote and compare.

Plenty of people try cooking paella for their own party. Common mistakes are mismatched pans and burners, overfilling and stirring. If you’d rather enjoy the party, let us cook.

Is live paella right for your event?

Burger and hot dog stalls are familiar but similar. A paella pan stands out. When you compare quotes, check what each one includes: staff, crockery, sides, travel and VAT. We itemise ours.

Why us?

  • Live cooking, not reheated food
  • Waiting staff and crockery on request
  • Sangria and bar staff available
  • Catering across Kent, including Mystole

Questions from Mystole

Could we have live paella in Broadham Down?

Only with permission from the park’s owner, generally the council. Ask them first, and we’ll send any information they need.

Do you trade at school fairs around Mystole?

Yes, with the school’s permission. Send us the date, pitch and expected numbers.

What about pudding?

Yes. Churros, crema catalana and tarta de Santiago are popular choices.

How much space do you need?

Less than you might think: a flat spot away from anything flammable, with space to serve. If in doubt, send a photo.

Can you handle a lunchtime rush?

Paella is cooked in big batches and served from the pan, so service is quick.

Can you cater for crew and volunteers?

We can. Crew, volunteer and VIP catering is available, with or without a public stall.

Who clears up?

We clear our cooking area away when service is finished. Clearing guests’ plates and tables can be added with waiting staff.

Can you supply plates?

Yes, on request. Crockery, cutlery and napkins, or good-quality disposables can be added to your booking.
