Catering for every guest
Few dishes handle mixed diets as well as paella, because each paella is cooked in its own pan. A few tips:
- Plan for vegan and gluten-free visitors
- Feed crew and volunteers at set times
- Send traders one clear trader pack
- Check allergen info is on display
Allergen details are available at the stall, and each pan is labelled.

How it works
Serving is fast: the paella goes straight from the pan to the plate, so large groups are fed quickly. When service is finished, we pack down. Summer events in Marston have daylight until about 9:25pm at midsummer and about 7:10pm by late September, so evening trading usually finishes in daylight in high summer. For winter markets, dark by about 3:55pm, the pitch needs lighting.
- It starts with your event details and pitch information.
- You get our menu, pitch requirements and paperwork.
- We set up at the agreed time.
- The paella cooks in full view, and we serve from the pan through the event.
- At the end, we clear our pitch.
Before we arrive
- Have a gazebo or cover ready if rain is likely
- Tell us when you want to eat
- Check the venue allows live cooking
